Baja Fresh Salsa

Well, let me just say Miss Biggest Diabetic Loser really knew what she was talking about when she said this is a good salsa.

She sent it to me awhile back and I finally got around to making it yesterday, and selling it at the farmer's market.

I wonder if she wants a cut? Hope not.

I love a good fresh salsa. As you know, I'm a little of a salsa snob, when it comes to the jarred varieties. So, put me in a Mexican restaurant with some good chips and a fresh batch, and it's all downhill from there. I've been known to make that my meal...

You NEED to try this recipe. I take that back, you HAVE to try this recipe. It is that good. I'll be making batches every week from here on out. Hopefully my garden starts producing so all I'll need to do is head to my backyard for the ingredients!


Baja Fresh Salsa
7 firm tomatoes (I used Roma)
1 jalapeno pepper
1/4 onion
1 clove garlic
1 t. salt
1/2 c. fresh cilantro
juice of 1 lime

Toss tomatoes, pepper, onion and garlic with some olive oil. On an indoor grill pan or outdoor barbecue grill until charred. Turning every 10 minutes or so.

Place all ingredients into the food processor and blend until you've reached your desired consistency (mine was pretty smooth - the way I like it!). Chill until ready to serve.

This salsa was a hit at the market yesterday. I only came back home with one container, and that was eaten in one sitting by the husband. Full recap of the market to come tomorrow!

Oh, and before I forget - did you hear? Trader Joe's in coming to West Des Moines, Iowa! I still have never been to this store, but I've heard great things!

  1. That sounds so good - I don't think I have ever had a salsa where the veggies are roasted or sauteed.

    Oh goodness...be prepared to be poor. Trader Joe's is amazing!

    I've made my sister's salsa before and been lucky enough to eat it when she brings it to parties, and it IS amazing! I could drink it!

    You'll love Trader Joe's. We just had one built in my town last year and now it's within walking distance of my office!! I used to drive 30 minutes to get to one.

    I love the frozen pot stickers, the Trader Joe's egg rolls (only 140 calories!), all their frozen fruits, especially mango chunks and pineapple chunks, chocolate covered soy nuts, etc... And their frozen chicken breasts, frozen veggies, like their skinny green beans, the tri-colored peppers, great for making chicken fajitas...
