Hot Reuben Dip

This hot dip tastes like a classic Reuben sandwich!
Serve it at the next party or make it for appetizer night soon.

Today is St. Patrick's Day so why not feature traditional corned beef in this fun hot dip? This dip has been around for years in our family. I've made it for multiple parties and gatherings and it always gets "oohs" and "ahhs" from those digging into it.

Now while it's the perfect food for TODAY, I make it all year around.

Whose says you can't enjoy corned beef any time of year?

As you can see this dip has all of the traditional FAVORITES of a reuben - corned beef, Swiss cheese, sauerkraut and a couple of extras to make it super creamy - sour cream and cream cheese.

Trust me, when you mix that all together it's splendid.

In fact I may have grabbed a carrot to dip it in and test it out cold. I didn't even give it a chance to melt together and get all amazing.

It was good, really good.

To serve this up, you have two choices - let it melt together in a slow cooker for a few hours and keep it on warm {great for parties} or you can dish it into a sprayed baking dish and melt it all together in the oven for a bit {also, great}.

Depending on your serving situation, do whatever you want!

For this photo shoot I scooped about half into a cute dish to bake up {the rest can stay covered in the fridge for a few days}, but I most definitely use the slow cooker when serving a hungry crowd.

When grabbing the ingredients for this dip be sure to also pick up some rye bread - I mean, it is the traditional bread of the Reuben!

All bakeries will have it on hand, some stores even have those little square rye toasts, those work great too. If you buy the bread, cut it into slices and give them a little toast in the oven to get crispy. I promise that crunchy bread is the ultimate dipper!

I'll also often serve a nutty or seedy cracker with this dip {some people prefer a cracker to bread}. Grab your favorite one and set those out too. And if you're feeling extra generous, a tray of sliced carrots or celery are nice touches too.

Oh, and one last tid bit of fun....

Do yourself a favor and make a homemade Reuben pizza with this dip. Yes, I said pizza. Spread some of this dip on a homemade or store bought crust, top with mozzarella cheese and bake until bubbly. Then right before serving drizzle the pizza with thousand island dressing.
