My Apple Cider Mini Donut Muffins are always a hit!
September is here!
It's long been my favorite time of the year, well before Fall become "everyone's favorite time of the year". Just saying. I'm here for all the cool breezes, crockpot soups, football games and pumpkin spice lattes. Been annoyed with me or jump on board with me.
And today I'm featuring the PERFECT little sweet donut.
I've been making smaller grocery store runs as of late - my kids are eating me out of the house - so smaller runs have been better for us. It allows me to grab fresh ingredients in shorter spans, grabbing quick items in the effort to try and stay on top of food running out.
Anywho.
On one of those trips I ran directly into a large display of fresh apple cider.
Game on, I thought!
Now, I've made these little donut muffins before but they needed a glam up. So I grabbed a half gallon of the apple cider and made sure I had the other ingredients on hand to make these beauties.
I baked these while the kids were at school, hid them when they came home and then brought them out the next morning to SMILES.
They melt in your mouth and will give you a little sugar high - but are 100% worth it.
These are soft, pillowy, with hints of apple cider and coated in melted butter, sugar and cinnamon. I know, they are indulgent, but golly they are so fun for Fall.
Bring these out on a crisp Saturday morning or bag them up and bring to your kid's sports activities with a hot cup of coffee and your day will be made.
These kind of remind of mini donuts at the fair (minus the mess of oil and frying)....these are baked in a mini muffin pan. Much easier! I highly recommend a silicone mini muffin pan. Here is the one I use and recommend - plus it's cute. Using a silicone baking pan allows you to easily push these out while still warm.
