Like I said, my intentions were to fore go the meat, until I saw one lonely leftover chicken breast sitting in the fridge, just begging for someone to eat it. As you know, it is hard for me to throw leftovers away...unless it's been eaten by the mold goddess.
So, this one lonely chicken breast got shredded and thrown in this dish.
I'm sorry.
BUT...definitely make this dish full of veggies, as it tastes just as good!
Brown Rice & Veggie Casserole
1 c. brown rice, cooked
1 can green beans
1/2 c. chopped carrots
1 can reduced sodium cream of chicken soup
1/2 c. skim milk
1 c. shredded cheddar cheese
1 t. garlic salt
salt/pepper, to taste
Cook rice accordingly. In a large mixing bowl combine all ingredients and stir in cooked rice. Place in greased casserole dish and bake for 35 min. at 375 degrees, or until bubbly and browning on top.
This can be served as a simple side dish, or as a main course - I'll let you decide. And certainly throw in whatever veggies you have on hand, green beans and carrots are just what I had to use up!
For all you meat lovers out there, do you try and eat at least one meatless meal a week?
We try...but usually I have to sneak it around the husband, as he would think the world is ending if some form of beef, chicken or pork doesn't arrive at the table.

ReplyDeleteThe casserole looks great. I have no idea why, but my hubs says he doesn't like casseroles...aren't they the same as any other dinner, just all packed in to one dish? :) I think his mom made way too many when he was a kid.

What if you tried a hearty veggie chili? And a dish with eggs instead of meat? Think you could get that past him?! We definitely don't eat meat every night...just don't desire it that much, plus it's expensive when you buy organic, which I only do after watching Food, Inc. I'll keep thinking of recipe ideas :)
ReplyDeleteI will admit, it's rare that we go without a meat at a meal. I think it's from being raised in eastern Iowa and being used to meat and potatoes growing up on a farm.
ReplyDeleteI am not much of a meat eater but my parents (who are very healthy eaters) have a very hard time imagining a meal without meat in it. I think for some people it seems to be a standard component that is hard to think of being without!
ReplyDeleteWe eat meatless anywhere from 2-5ish days a week. I've never been a big meat fan, even when we do eat it, both of us eat small portions and have large on the veggies and sides instead. Johnny doesn't notice anything, luckily. There have been times where I'll tell him dinner was vegan after the fact and he'll argue "no it wasn't, it was so filling!" haha
ReplyDeleteI'm not a huge meat eater. Every now and then I'll get a major craving for one of P's burgers and he is quick to whip one right up for me. I probably only eat meat 3-4 nights a week.
ReplyDeletewe eat meat free pretty often, love veggie filled ravioli, plus we have fish a couple times a week. My fave meat free lunch is a black bean burger topped with cheddar and salsa...YUM.
