Greek Yogurt Pancakes
1 egg
1 c. skim milk
3/4 c. greek yogurt
1 t. vanilla
1 t. salt
1 T. sugar
1 1/2 t. baking soda
1 1/2 t. baking powder
2 1/2 c. flour
Mix all wet ingredients together, and then combine with the sifted dry ingredients. It will be a pretty thick batter. Cook on hot griddle a few minutes a side, turning when bubbles start to pop and color is golden brown. Serve with butter, syrup, jam, fruit....whatever tickles your fancy!
Little man and I are headed to my parents today for a visit and then I'll be meeting up with some girlfriends later tonight. Grandma will be babysitting! So, I'll be back in the blog world on Wednesday. That reminds me, speaking of girlfriends. I just started reading The Girls From Ames last night. Has anyone else read? I can already tell it is going to be a good book. It makes me think of my life, as I treasure my girlfriends!

Great pancake recipe. My husband eats pancakes once a week and I know he'll totally go for this change!
ReplyDeleteI love pancakes! Wish I had more time in the morning through the week to make them. I've added yogurt and cottage cheese as milk subs and they've always coma out wonderful!

ReplyDeleteI made pancakes with yogurt in them, for the first time this weekend! They were fabulous. I didn't use greek yogurt though...I bet it'd make them even better. :)

Ohhh I love to add yogurt to ANYTHING. I love thin pancakes though. Guess I could add a bit extra milk though. Have you made yogurt cheese? I plan on posting it next week. SO good and easy.
