Skillet Apple Fruit Pizza

Here's a different fruit pizza for you.
My Skillet Apple Fruit Pizza is full of peanut butter, caramel and tart apples!

I was first introduced to this fun spin on dessert pizza in high school. My childhood friend Missy (and dear friend to this day) started bringing it to all of our events. The hundreds of sleepovers we had, the multiple cabin parties at the lake and usually always during the Fall when apples are at their finest.

Now we have all had the traditional fruit pizza (sugar cookie bottom, sweetened cream cheese layer and chopped fruit), but this one is fun and different!

And if you love peanut butter - you will be all in!

Now the process is the same - a cookie crust and cream cheese layer. But both are amped up with loads of peanut butter (because apples go amazingly well with peanut butter!). I chose to bake mine in a large rimmed cast iron skillet. Here is mine if you need a good one.

I did this mainly because I love the look of it and it's pretty for entertaining, but by all means you can bake in a normal 9x13 baking pan. Anything works!

Of course, it will look like a "pizza" if it is baked in a round dish. But again, to each is own.

After those fun two layers - it honestly just gets better!

Go ahead and use any apples you have on hand or love. I used Honeycrisp in this case as I love their tartness, but any old apple will do. I also took the time to peel mine, but again you don't have to. This recipe is forgiving!

You'll want to arrange them in a circle overlapping just slightly to create a pretty pinwheel effect. Or you can dice, chop and just drop on the pan. Honestly, it all tastes the same!

And then more magic happens.

You sprinkle those sliced apples with cinnamon, chopped peanuts and caramel.

YES, YOU READ THAT CORRECTLY.

How can a person not love a peanut butter cookie, peanut butter infused cream cheese, apples, cinnamon, peanuts and caramel? Slice it up like a pizza and watch your family or guests devour it!

Go ahead and drizzle more caramel if needed.

What's great about this dessert is that it keeps brilliantly in the fridge. I don't even cover it (which is also convenient for sneaking a bite)! Since the apples are tossed in a bit of lemon juice they stay fresh and don't turn brown. All of the ingredients stay firm and fresh.

We ate off of it for 2.5 days. Sadly it didn't last any longer than that!
