First, let's clarify. This is called Green Grape Salad, but to be honest it has little nutritional value, minus the grapes, pecans and some dairy.
But, that doesn't mean you cannot enjoy this "salad".
I got this recipe many years ago from an old co-worker. Heck, she probably doesn't even remember me. Kathy, are you out there?
Anyway, I distinctly remember sitting in an executive board room one day with a giant spread of goodies before me. I looked at this salad and thought to myself, "What in the hell is that slop?" To me it looked like a huge bowl of tuna salad with grapes thrown in.
After wrapping my head around the idea of someone actually bringing tuna salad to a food day, I got up the guts to take a plastic spoon and grab a bite. Much to my surprise it wasn't tuna. Nor did it taste like tuna. It was smooth, creamy, sweet and a little nutty.
Perfect.
To this day I still have the worn copy from Kathy and I've made it time and time again. It's great for potlucks or hot summer days.
Green Grape Salad
3 lbs. green grapes, halved (lengthwise)
8 oz. cream cheese
8 oz. sour cream
1/2 c. sugar
1 t. vanilla
4 oz. chopped pecans
2 T. brown sugar
Mix cream cheese, sour cream, sugar and vanilla. Stir in grapes. Sprinkle brown sugar and pecans, mix again. Chill until served. May be made a day ahead and stores well in the fridge for a few days.
Thought I'd give an update on the potty training, as some of you have asked. It's exhausting. I feel like all I do is lift the little man on the pot, talk about pee-pee, wait for him to pee-pee, clap and dance when he pee-pees, get mad when he pee-pees on the floor, and so on.
But, we have graduated to diapers only at nap time and bedtime. He gets the concept and is doing well, but this mom is tired. I wish you could ship them off to potty training camp for a week and they'd come back cured.
