Pimento Cheese Spread

I'm bringing back this popular recipe from the 1970's...pimento cheese!
Easy to make, easy to serve at your next party.

I first made this Pimento Cheese Spread for a party back in 2012 where everyone loved it, published it on the blog and then promptly forgot about it until last week.

This sometimes happens when you have HUNDREDS of recipes on your website, old ones tend to get forgotten until you bring them back.

Last week as I grabbed a jar of pickles at the grocery store my eyes floated to the top shelf where I saw jarred pimentos and the memory of this dip came flooding back. I craved it immediately and knew I needed to bring it back.

So What is Pimento Cheese?

Although the recipe has origins in the north, the south claim it as theirs, naming it the "caviar of the south". Traditionally made with shredded cheeses, mayo and pimentos (a sweet and succulent pepper) - it's served with crackers or in sandwiches.

Pimento cheese sandwiches have a long history at the Masters golf tournament in Augusta, Georgia each year - having been served there for years, still at an affordable cheap price.

I'm not lying when I say this dip comes together in just 5 minutes. It's incredibly easy to throw together the day ahead for any party. Similar to my 5 Minute BLT Frito Dip or my families favorite chip and veggie dip - it can be whipped up in a snap and ready for your gatherings in no time.

Give this dip a day in the fridge and I think it's even better! More time for those flavors to all come together.

I like to serve this pimento cheese spread with crackers (wheat thins are a favorite), but it's also great with sliced carrots or cut up soft, pita bread. If you want to get really fancy sandwich it in between two slices of white bread and cut the crusts off just like they did back in the day!
