One thing I love about my mom is how she gets my kids involved in the kitchen with her. One of the most enjoyable things my little guy likes to do, is to sit at my mom's kitchen island and help her, with whatever she is doing. Baking a cake, frosting a cake, stirring together a dip or helping her with dinner.
Granted he'll just be 3 in September, but he loves to help. He's messy, can't stir the greatest, but she doesn't care. They just take their time and have fun.
So last month when the kids stayed with my parents for a few days, they came back with this recipe. A one minute dessert that is perfect for a small sweet treat after dinner. I was a little hesitant that it would work, but it did!
Here's the deal.
You mix one angel food cake mix with one regular cake mix (any flavor, we just happened to do chocolate). Mix the two cake mixes together and store in a plastic baggie.
Then get a glass ramekin or coffee mug and start cookin'.
Spray the cup with cooking spray (or use my homemade version) and mix together in a small bowl, 3 T. of cake mix and 3 T. water. Pour into the ramekin or mug and microwave for 1 minute. A little less if you have a really high powered microwave.
Loosen the sides and invert. Simple as that.
And because I can't ever leave a recipe alone, the second time I made this, I poured the batter into the ramekin and sprinkled a handful on chocolate chips into the batter.
You know what happened? It was the most delicious chocolate molten lava cake, ever known to man. The perfect chocolate cake on the outside, with hot, gooey melted chocolate on the inside. Now that I made it that way, I'll probably never go back.
So, I'm thinking - during the upcoming fall season I should make a pumpkin version, and then of course I better try a red velvet version, and gosh, I shouldn't leave out a fun, fruity strawberry version.
I have no idea why my mother gave this to me, because now I am obsessed. I can't just leave things alone.
