There are times when I'm at the grocery store and chicken is on sale and I go wild. This past weekend it was on sale for .79 cents/lb! Now it required me to roast a whole chicken, but it was worth it.
So, then I'm left with....what the heck do I do with all of it? I made a list {you know, because I'm a freakish list maker} and set out my to-do's for chicken meals. It was as follows: roast chicken, shredded chicken for taco salads and this killer chicken salad.
There is nothing special to this recipe, but for some reason it tastes like it came out of one of the utmost fanciest deli's in the U.S. And although I usually just toast some bread, slather it on and call it good, I went the extra step and stuffed it in pitas.
With spinach of course, as I'm faking trying to be healthy.
The husband eats this stuff straight out of the fridge, fork in hand, with no time to mess with a silly pita. But, I on the other hand, like eating it fancy.
And it travels nicely for work.
Chicken Salad Pita Pockets
3 c. shredded chicken
3/4 c. mayo {I used Hellman's}
1/8 c. mustard
1 t. dill
salt
pepper
pita pockets
spinach
In a bowl combine first 6 ingredients. Refrigerate for at least one hour before serving. Scoop salad into pita pocket, along with a handful of spinach. Eat immediately, or wrap up for an easy lunch later on.

So last night was Halloween. So that meant this mama had to get two kiddos fed dinner, dressed up and out the door by 5:30. There might have been a few curse words under my breath.
Say hello, to our little lion. This is the first year he even understood what Halloween was...he was ALL about it. Now of course, when it was time to actually say "trick or treat" at someones door, he clammed up as hard as a vegan at a barbecue joint, but it all worked out in the end. Mom said it for him.
And then there is our bumblebee. Getting the costume on her was half my challenge, but thankfully I think she later forgot about it and focused all her attention on putting suckers in her mouth.
She kept me busy all night.
And well, a nice Halloween shot together? Silly, silly you. You are lucky you are seeing these. You are welcome.

Our Halloween was about the same as yours! I had to say 'trick or treat' for B and our little guy was content as long as he had a treat in his hand!
