Peach Crumble Bars

I've been making these bars for years, they are truly so simple!
With caramel undertones, fresh or frozen peaches and an unbelievable crust & topping, they are heavenly.

I first unveiled these delicious dessert bars on the blog in 2013. That was before I even had 3 kids! Over a decade ago.

I often go back to the archives and look at these old recipes (and often cringe)...and if one is good enough I'll make it again, retake photos and glam it back up.

And that is what I've done for you today!

I had forgotten just how good these were. And like my teenager said, "Mom, you're not even that big of a peach fan!". She's right, I'm not. I enjoy them from time to time, but they are definitely not my fruit of choice.

But in these bars.....oh my, delicious.

What's even better? They are easy peasy. You can use a canned variety like I did, you can use fresh peaches or you can even use ones you've frozen from last Summer. Peaches are versatile. They all bake up nicely.

The crust is simple - just brown sugar, butter, flour and salt. The brown sugar gives the crust a caramel flavor (trust me, USE brown sugar). And some of that crust gets sprinkled on top of those peaches right before baking.

It's like a fun, little peach sandwich.

Your house will smell like a freshly baked peach pie, but without all the fuss of making a lattice pie crust.

I had these cooling on the counter when the kids got home from school and BIG mistake I had yet to take photos of them. So I need you to picture....me hurriedly trying to snap photos with THREE hungry kids hovering over my shoulder.

That is exactly what happened.

Before they took a bite I told them this might be the best dessert I've made a long time. And they agreed! I cannot tell you how good the deep, nutty flavor is. Oh my gosh, oh my gosh...that is really what I keep saying over and over.

We were so sad when they were gone.

Again, use whatever peaches you have on hand! And if you have none, grab a can of peaches off the grocery store shelves. These do not disappoint.
