One of our favorite Summer cakes has gotten an upgrade!
Grab some fresh strawberries and just a few ingredients. Your family will love this one.
If you've been following me on socials these past couple of weeks you've seen I'm a tad bit obsessed with strawberry season. Which here in the Midwest is always the first part of June. We have to wait a bit longer than some parts of the country, but once they ripen they are the most delicious!
Ever since I can remember we've gone strawberry picking. Bent over, in the heat, itching from bugs and more....picking those juicy strawberries.
My Mom taught me how to make easy strawberry freezer jam that we keep stocked in our deep freeze all year long, plus I always, always find some desserts to sneak in too.

I first introduced it back in 2015 and it has become a fan favorite ever since. Particularly because it's so darn easy!
Grab those fresh strawberries, some sugar, a yellow cake mix and a bag of marshmallows. Plus, a few extra things - but honestly that is about it! People love the ease of this recipe and kids love that you throw marshmallows in and suddenly when baked they disappear.
It's pretty darn cool!
And yes, because people often ask - can any berry be used?
SURE THING!
I've tested out raspberries {delicious} and a friend once made it with freshly picked blueberries {which she claimed delicious}. So any berry will work.
But since strawberries are my most favorite fruit, I more times than not make this cake in early June after I have picked a flat or two and need to use them up.
When you bake this cake, the berries soften up and the cake puffs up and gets a bit crispy around the edges. For these photos I left the cake in the pan as is.....but you can flip it over to get that traditional "upside down" look if showcasing it for a crowd.
My family didn't care - they just wanted to dig in!
When describing this cake to a friend awhile back I remember saying, "do you like strawberry shortcake?" She immediately said yes. So I responded, "then you'll love this cake".
And of course add whipped cream!
Or some soft vanilla ice cream.
That puffy, creamy, vanilla goodness makes any cake better in my opinion. Eat it warm out of the oven or refrigerate it and eat it cold. Both are great! And don't be surprised if you find yourself sneaking bites with a big spoon straight out of the fridge.

I was home alone when I baked this cake and shortly after my soon-to-be teenage son walked into the kitchen. He was sweaty and dirty from just getting home from a game. His face immediately LIT UP. All his exhaustion went out the door.
I gave him a spoon and plate loaded up and he was in heaven.
Really anyway to a man {or soon to be teenager's heart} is most definitely food.
