When I was recently asked by The J.M. Smucker Company to create a unique dessert recipe using Pillsbury baking mixes, I blinked maybe once before quickly agreeing.
Desserts and I go together like peas and carrots. We just belong together. And I'm all about a dessert that is easy and family friendly. My almost 5 year old daughter did most of the work!
Pillsbury Cakes Mixes and Frostings are the perfect compliment to any kitchen. Most families, like mine, are busy and often our wallets are pinched, but these mixes are affordable and convenient.
While this baking enthusiast was at school her younger sister and I went to Walmart and stocked up on mixes and frostings. Whoa, so many to choose from! I may have purchased more than I needed, but I'm not worried about it. My pantry is stocked and I see many desserts in my future.
Maybe these Cake Mix Funfetti Cookies? Or this Double Chocolate Dulce de Leche Cake? I could really go on and on...
Although baking with littles can be a BIT more stressful, I try and push those feelings aside and live in the moment. My middle daughter loves helping me bake. She asks to make cookies at least once a week! I generally make one dessert a week, often on the weekends, for us to snack on throughout the week and you better believe she is right at my side each and every time. Together, this time, we "mixed up a moment" together and made a killer cake.
When brainstorming a recipe for this post, my mind immediately went to my favorite chocolate bar, the Almond Joy candy bar. It is a running joke that anytime one enters our house, I immediately stash it in the back of the freezer so no one else will find it.
I rarely buy them, if ever, but since people know I like them, sometimes they just "show up".
I'm not complaining.
Just stay out of my freezer if you come over, okay?
What I love about Pillsbury cake mixes is the simplicity of them. Eggs, water, oil, that is it! Even a young child can tackle this stuff. In fact, I usually let her handle most of it.
Minus, my OCD-got-to-have-the-bowl-scraped-completely-clean-problem. At that point I take over. But, do you blame me? We don't want to waste any of that delicious batter. This poke cake is so forgiving.
Bake the cake and let it cool.
Poke holes into the cake.
Spread on hot fudge.
Mix together the frosting and shredded coconut.
Top with sliced almonds.
Done.
That's it!
Are you one of those people who feel overwhelmed when asked to bake a cake? Sometimes it seems very daunting, I'm with ya. I get it.
But here's the thing. Keep it simple! Pillsbury mixes are great quality and are inexpensive, so take the help where you can get it! After this Almond Joy Poke Cake was done baking and cooled, it took about 10 minutes to assemble.
Nothing fancy, but down right delicious. And people love it! We were one of "those" families last weekend and kept this little joy all to ourselves. I usually deliver half of whatever I make to friends or family, but this cake stays fresh for so long when covered, that we just snacked on it all week long. It really was our little treat all week long after dinner. If the kids were good and had behaved, they got cake.
Hey, they are easy to please.
Almond Joy Poke Cake
1 box Pillsbury White Cake Mix
2 eggs
1 c. water
1/2 c. melted coconut oil
16 oz. Pillsbury Vanilla Frosting
2 c. shredded sweetened coconut
12 oz. hot fudge
2 oz. sliced almonds
1. Preheat the oven to 350 degrees and grease a 9x13 baking pan.
2. Mix together the cake mix, eggs, water and coconut oil until the batter is smooth. Pour into the greased pan and bake for 34 minutes or until golden and toothpick inserted comes out clean.
3. Allow the cake to cool.
4. Using the end of a wooden spoon poke holes throughout the entire cake. Spread on the hot fudge, slightly pushing down into those holes.
5. In a bowl combine the frosting and coconut. Spread this on top of the hot fudge.
6. Sprinkle with almonds.
