This past week it was just the kids and I with the husband out of town for work. Can I admit something to you?
I love my alone time.
Don't get me wrong. I love my family to pieces, but I also love when some of them are gone and I just come and go how I please. You kinda feel like a kid again? Does this make sense to you at all? Forgive me. What I am trying to say is that when the husband travels I do not get all worked up about it like some wives do. I look at it like a time to get things done.
I got super creative in the kitchen {and made a hell of a mess}.
The kids and I randomly tackled the mall, Build-A-Bear and the Children's museum in one afternoon.
I casually visited friends here and there and our dinners weren't promptly at 5:30.
We are just a more "routine" family when dad is home, so let me just say last week was not routine. Moving on.
Oh, this chicken. I think I died a little when I took my first bite. This cheesy fried chicken was developed during last week's "un-routine" week. The kids loved it. I loved it. And when I served it up as sandwiches on biscuits it just took it to a different level.
I felt like I was in a Southern restaurant casually grazing my way through dinner. And the butter sauce? Whoa. It's sweet, buttery and has just a hint of spice. I mean, my 5 year old was dunking her chicken in it, so you can handle it. I promise.
And do you want to know what made the crunchy breaded coating on the chicken?
Goldfish crackers.
Yes, cheesy Goldfish crackers pulsed down to crumbs.
My kids received a few bags of them in their Easter baskets the previous weekend and after opening my pantry cupboard twice and having them fall out on me, I decided to put them to good use.
I'm not kidding when I say this is the juiciest chicken sandwich around. I was literally eating mine over the kitchen sink with the spicy honey butter sauce dripping down my arms.
It was pure bliss.
The kids needed a bath.
We were all sticky.

Cheesy Fried Chicken with Spicy Honey Butter
2 boneless skinless chicken breasts, cut into 4 pieces each, pounded thin {8 total}
2 c. Goldfish crackers
1/2 c. Italian style breadcrumbs
1 egg
1/2 c. water
1 c. flour
olive or canola oil for frying
Spicy Honey Butter
3/4 stick butter, melted
10-15 dashes of hot sauce
1/3 c. honey
1. In a large skillet heat the oil to medium-high heat, filling the pan to cover the bottom.
2. In a food processor combine and pulse the Goldfish crackers and breadcrumbs together. Pour into a bowl and set aside.
3. Crack the egg in a bowl and whisk together with the water.
4. Place the flour in another bowl.
5. When the oil is hot, dredge the chicken in the flour, then the egg, then the breading mixture, coating evenly. Place in the hot oil. Cook 3-4 minutes a side, flipping once.
6. While the chicken is cooking, combine the melted butter, hot sauce and honey and set aside.
7. When the chicken is removed from the oil, liberally brush with the spicy honey butter. Save more for dipping sauce. If not eating right away or if cooking the chicken in batches turn the oven on warm and place the coated chicken on a pan to stay warm.
8. Serve as is or sandwich style on biscuits like we did. My homemade version is great or go the simple route with Grands refrigerated biscuits.
