Cheesy Taco Stuffed Mini Peppers

Why not change up the original stuffed pepper recipe?
This version is ideal for Taco Tuesday!

Whew!

I'm back.  I haven't posted a recipe in 5 days!  That is a record around here lately.  Life got a bit crazy. We've been tackling some projects outside {expanding the garden, new gutters on the house, tearing off our old deck, putting on a new one, etc.} so it seems like all of my spare time has been puts towards that.

Doing all of this in between endless bouts of rain, the start of t-ball practices, school functions, yada, yada, the blog was put a bit on the back burner.  And boy oh boy the perfectionist in me HATES that. So that there is my apology with a long list of excuses.

Moving on.

This past Friday night when the older two kids and I were headed out the door for a school fundraiser, I whipped up these stuffed mini peppers for the husband.  He loves, loves, loves the original classic stuffed pepper, you know the ones filled with tomato sauce, hamburger and cheese, but as in true form I changed it up for him.

I threw them in the oven, took them out right before I was leaving, shot some photos and prayed he liked them.

I got a text later saying, "Dinner was awesome, thanks!"

Sweet.  They worked!

I bulked up the meat with salsa, chili powder, cumin and a little creamy cheese.  Then of course topped with more cheese and a bit of cilantro.  The sweet mini peppers served as the boat holding all of this together and honestly were almost bite sized appetizers.

But, alas, he ate the entire pan.

But seriously, serve these with a side of chips and salsa, a bowl of guacamole or over rice and make it a taco bowl.  They are awesome!

  1. Loved this recipe. Only modification was to add more veggies—finely diced celery, carrots, onions, tomatoes. Don’t skip the cream cheese. It puts this one over the top!
