I've been thinking lately. Someday when I'm older and have more time I'll do things differently. First off, I'm going to buy an actual pair of pajamas. Like, real pajamas. Not the t-shirt I wore all day or the yoga pants I live in. Actual, matching, nice, comfy pajamas. Done.
Secondly, I'm going to invest in a proper face wash, a good exfoliate and a super expensive night cream that takes all the wrinkles away. I'll wash my face without something other than the baby wipe I grab on the way to the bathroom. Essentially I'll take care of my face like I take care of my kids.
Thirdly, I'll throw fancy holiday parties and serve a feast of appetizers. I'll have a house that has space to hold a crowd and we'll drink, chat and eat until our hearts content. Shrimp cocktail, bacon wrapped dates, cheesy dips with homemade pita chips as dippers and anything this side of the Mississippi stabbed with a toothpick.
This 3 Cheese Italian Flatbread would be on the menu. It's easy, quick and tastes delicious. Dunking in a side of hearty marinara? Even better.
My relationship with the Krusteaz company goes back a few years. Even before they knew I had a food blog I was using their products. Here's the thing....I love making pancakes and waffles from scratch {my Lemon Ricotta Blueberry Pancakes are always a hit}, but I'm just like any other person limited on time.
Like this past Sunday morning...the kids were all hammering for pancakes and we had about one hour to bathe all three of them, get dressed and out the door for church. The husband and I divided and conquered. I handled the baths and he grabbed a box of Honey Wheat mix and got to work.
We got there on time.
Easy peasy.
But Krusteaz mixes are much more than pancakes and waffles. In 1932 a group of women in a Seattle bridge club {adorable} came up with a simple idea to make an easy pie crust. They called it "Crust Ease". Little did they know it would lead to a wide variety of home-baked good still popular today.
Today they have a variety of products including Quick Breads, Muffins, Crumb Cakes, Flatbreads, Cookies, Bars, Cornbread and Cobblers as well as their popular pancake and waffle mixes.
I made this 3 Cheese Italian Flatbread on a random weekday to snack on with the kids. Sometimes I do that. Forget all the fruits and vegetables, let's eat bread! We topped with with freshly grated Parmesan, a sharp white cheddar and some salty, crumbled feta. When baked and ready to eat I served it with a big bowl of chunky marinara sauce for dunking.
Pretty much the best lunch ever. Just call me 'Mother-of-the-Year'.
3 Cheese Italian Flatbread
1/2 c. freshly grated Parmesan cheese
1 c. shredded white cheddar cheese
1 c. crumbled feta cheese
1 c. warm water
1/4 c. olive oil + additional for brushing
marinara sauce for dipping
1. Preheat the oven to 475 degrees. Spray a large rimmed cookie sheet with cooking spray.
2. Stir together the flatbread mix and yeast {included in the package}, warm water and 1/4 c. of oil stirring until it forms a ball. Cover and let rest/sit for 15 minutes.
3. Shape the dough by dividing into two portions. With floured hands stretch the dough and pat down into two long rectangle shapes and brush the dough with additional olive oil.
4. Top with the three shredded cheeses and dried parsley.
5. Bake for 7-11 minutes until golden brown. Cut into slices and serve with warm marinara sauce.
