I'm sure by now you're thinking, golly all she has lately on this blog are rich desserts, fancy breakfasts and creamy, cheesy dinners.
Well, you are "kind of" right. I do showcase a lot of those, but I don't eat like that all the time. My breakfasts usually consist of an egg, or slice of peanut butter toast or oatmeal. Lunches are a half of a sandwich, veggies, a salad or a wrap. Dinners? Fairly healthy.
Hence, where the sweet potato in this waffle recipe came from. I baked one too many the night before and with one sitting in our fridge completely lonely and forgotten, I decided to use it in this waffle batter.
This batter was PERFECT and I knew it would work well with my friends at Cuisinart. They gladly jumped on board with my holiday series and are giving away one of their state-of-the-art waffle makers {which also turns into a pancake griller....holla!}.
How many Cuisinart appliances are in my kitchen? Ha. Too many to probably count. But here is a good starter list. Every one of which I love.
Cuisinart Belgian Waffle Maker with Pancake Plates {today's giveaway!}
I use them all weekly, some of them daily, but I'm a bit of a kitchen freek {hello, food blogger}, so I completely understand if it's normal for you to only drag them out every few months or so.
Did you know Julia Child held a major part in making Cuisinart a household name? Her and James Beard were one of the first culinary experts to tell the world about food processors back in 1973, but the company is much more than food processors today featuring bake ware, espresso makers, hand mixers, flatware, toaster ovens and slow cookers.
The morning I made these, like I told you, I was feeling saucy. I didn't just want to make any old boring waffle. So I jazzed up the batter with a healthy sweet potato and made a caramel pecan topping that literally drips with envy.
They taste like caramel pecan rolls, but better. The waffle gets crispy, is rich and all that topping soaks into those deep holes. You serve these and you'll have everyone coming back the following Saturday morning.
Sweet Potato Waffles with Caramel Pecan Topping
2 1/4 c. flour
2 T. sugar
1 package active dry yeast {or 2 1/4 t.}
1/2 t. salt
1 t. cinnamon
2 eggs
1 mashed sweet potato
1/4 c. vegetable oil
1 3/4 c. milk
1 t. vanilla
Caramel Topping:
2 T. butter
1 c. chopped pecans
1/4 c. brown sugar
2 T. water
1 t. cinnamon
1/2 t. nutmeg
1 t. salt
1. In a bowl whisk together the eggs, mashed sweet potato, oil, milk and vanilla. Sift together the dry ingredients and gently stir into the wet. Cover and refrigerate overnight.
2. Preheat your waffle maker.
3. In a saucepan melt the butter and add in the pecans, stirring over gentle heat for a couple minutes. Add in the brown sugar, water and spices cooking until the sugar is dissolved. Keep warm until the waffles are ready.
4. When your waffle maker is hot, spray with cooking spray and ladel the batter into a the well, cooking to your desired doneness {crispy or soft}
5. Serve the warm waffles with the warm caramel pecan syrup.
I'm super stoked for this giveaway as I know personally that this waffle maker is stellar. And guess what? The plates are removeable {making them very easy to clean} and you flip them over and they are pancake plates! Two for the price of one my friends.
