My new favorite dip for summer!
People continually come crawling back to this bowl for seconds.
So this past weekend, as you all know, was Mother's Day, but it was extra special in our house as our youngest shared Mother's Day with me and celebrated her 3rd birthday.
She's 3! I cannot believe it. Remember her birth story? You can read about it here. She came to us in a flourish and hasn't stopped since. Being the youngest, I feel she is wise beyond her 3 years, yet loves her Mama time alone with me all the same. Unfortunately she was a bit under the weather for her birthday, but judging by this smile, it didn't affect her too much!
We invited family over for a joint Mother's Day and birthday barbecue and it was....HOT! It truly felt like summer. I served barbecue pulled pork, potato salad, baked beans, fruit salad and the dip I'm showcasing today, my 5 Minute BLT Frito Dip.
What a hit it was!

My favorite course.
I have no problem making a meal out of chips and salsa, or chips and guacamole, or cheese and crackers or heck, even a plate of nachos. I'm a snacker, what can I say?
A good dip is like a good friend. You just keep going back for more. This dip? Beyond easy. And tasty. I had three people ask me for the recipe on Sunday. Everyone loved it and not a lick was left when the party was done.
That my friends, is a good sign of a good dip.
What's great about this appetizer is that for one it really, truly only takes 5 minutes to prepare! Secondly, you can make it a few hours ahead or a day ahead stick it in the fridge and it's ready to go. Perfect for pool parties, barbecues or.....LUNCH...you know, for those who can make a snack a meal.

Tuck this one away for the warm months ahead. Studded with crisp bacon, diced tomatoes, green onions, cheese and a very unique ingredient that gives it a CRUNCH, it will win over most anyone!
5 Minute BLT Frito Dip
1 1/2 c. mayo
8 oz. shredded cheddar cheese
4 green onions, diced
1/2 c. cooked, chopped bacon
1 small tomato, diced
1/2 c. silvered almonds
1. In a bowl combine all of the ingredients, cover and chill for at least two hours before serving. Use Frito chips as dippers.
