It took me 35 years to start drinking coffee.
And by coffee I mean, coffee with creamer. Coffee that is jacked up a bit. Latte's are nice. Cappuccino's are good. You know, basically coffee on crack.
It's not like I didn't grow up around it. My parents drank it daily. I remember road trips where my Dad would bring a flimsy styrofoam cup in the car with him filled to the brim with coffee, along with a full thermos that sat on the floor in the front seat. This was well before all the fancy insulated cups we have today.
In college {oh, how I miss college some days...the sleeping in, the friends, the parties, the endless amounts of pizza}, I don't remember any of us having coffee pots in the dorms and Starbucks had yet to invade campus. Fast forward to married life and kids, I had still not gotten on the bandwagon. I think I was just misinformed. I did not know about all the delicious ways to drink it.
Then last year I ordered a frothy, flavored one on a road trip, because I was tired and dragging and thought, "why the heck not", and I liked it.
I liked it!
It took me 35 years. Sometimes this nut is just hard to crack. I tend to get into routines and don't apprecite them getting interferred with. BUT, the introduction of coffee into my life was a good interruption.
Of course, once I started drinking it a few times a week my coffee pot broke. Because THAT is my life. It was one a company had sent me a few years back and had gotten a lot of use from the husband, so I tossed that one out and drug out an ancient one from the closet and that is the one I'm still using today.
Hint. I need/want coffee maker recommendations. Maybe an early Christmas present to me?
So far the crappy one from the closet has worked well enough and has allowed me to indulge each morning with a little pick-me-up.
You know what else is fun? Ordering coffee. Yes, that is another insight to my boring life. I now get excited about grabbing a coffee to go from a hip coffee shop or chain drive-through. While on vacation last week {can I pleeeeeeeease go back?}, I happened upon this coffee shop mid-week and promptly incorporated them into my morning walking routine.

When we arrived home and settled back into normal life, I started brainstorming making my own coffee creamer. I've been buying a naturally sweetened creamer from ALDI, which is delicious - and I'll continue to buy it, but as with anything food related with me, I wondered if I could make my own.

And since Fall is right around the corner my mind gravitated towards pumpkin {I realize it's 85 degrees today, but hang with me here}, soon the sun will get a bit lighter and our mornings will turn cooler. Before you know it, we'll be knee deep into Fall and grabbing a slice of pumpkin pie.

Okay, maybe I have a pumpkin problem.
This homemade creamer is a cinch to make. Give yourself less than 10 minutes and you're stocked for the week. It smells amazing and tastes even better. Grab a pint sized mason jar, pour it in, seal it tight and stick it in the fridge to enjoy for the next week.

Don't like pumpkin? Omit it and replace with vanilla extract, nutmeg and a little more cinnamon. And then write me a long email stating why you don't like pumpkin, because clearly we are on different planets.

Homemade Pumpkin Pie Spice Coffee Creamer

Fall spices are all about comfort and warmth - which includes pumpkin! This homemade coffee creamer will allow you to make your own latte at home.
INGREDIENTS:
- 2 c. half and half
- 4 T. pumpkin puree
- 2 T. sugar
- 2 t. pumpkin pie spice
- 1-2 cinnamon sticks
INSTRUCTIONS:
- In a small saucepan whisk together the half and half, pumpkin puree, sugar and pumpkin pie spice. Drop in the cinnamon sticks.
- Bring this to a boil, continuing to stir for one minute.
- Remove from the heat and allow to cool for 5 minutes before adding to your coffee.
- Make coffee as usual using this creamer, adding additional sugar if needed.
- Keep in a sealed glass mason jar in the fridge {removing the cinnamon sticks} for up to one week. Shake well before using.

This was so good! The pumpkin flavor really came through nicely. It only takes a few minutes and is well worth it if you’re a pumpkin fan.
