'Tis the season for pie!
This simple, easy pecan pie is sweet, nutty and delicious.
I have never been a pie baker.
A pie eater, yes, but baked them?
Rarely.
Pie crusts seemed a bit daunting. That need to make them look perfect. Then the whole making sure the filling isn't too runny or too firm. The pressure! In my opinion, it was just easier to bake a cake.
But then, here comes the holidays and everyone wants a slice of pie. So I put my big girl panties on and made one of my favorites. Pecan pie. I've loved it for as long as I've loved breathing. The sweetness, filled with salty pecans all in a homemade pie crust.

Per usual, we are on the road again. When will the day come where I have a house big enough to host a holiday? That is my dream. To have a home where we can invite everyone HERE. I would like a holiday where I wake up in my own house and go to bed in my own house.
Anywho...like I said, we'll be traveling from Thursday to Sunday.
We'll be eating some traditional Thanksgiving foods {green bean casserole, mashed potatoes, etc} and some non-traditional Thanksgiving foods {i.e. pork chops on the grill}, because when your soon-to-be 97 year old grandmother requests an un-traditional meat for the main course you grant it.
But, one thing is certain, there WILL BE PIE.
My sister-in-law texted me a few days back saying she was bringing the pie. What kind should we have, she asked?
My response.
"Of course bring pumpkin. And pecan, because that's my favorite. Oh, but people really love French Silk. Heck, bring all three."
Her response.
Done.

If you've never tackled pie, you should tackle this one. It is SO EASY. If you can pour ingredients into a bowl and stir with a wooden spoon, you can make this pie.
Let yourself be the hit of the Thanksgiving table. Just don't forget the whipped cream!

The BEST Pecan Pie

This classic holiday pie will be the star of the show! Homemade crust in a rich custard filling and loaded with pecans, grab a fork and dig in.
ingredients:
For the crust:
- 1 1/2 c. flour
- 1 t. salt
- 1/3 c. shortening
- 5 T. unsalted, cold butter
- 2 t. white vinegar
- 5-7 T. ice water
For the filling:
- 1 c. sugar
- 1/4 c. brown sugar
- 1 c. corn syrup
- 1/3 c. butter, melted
- 3 eggs, beaten
- 1 c. chopped pecans
instructions:
- In a bowl combine the flour and salt. Using a pastry blender or fork, cut in the shortening and butter until it resembles coarse crumbs.
- Add in the vinegar and ice water, stirring to bring the dough together in a ball.
- Dust flour over the dough and using a rolling pin, roll out into a 10 inch circle. Grease an 8 inch pie plate and lay the dough over the plate. Press down and tuck/crimp in the top edges, cutting off any excess.
- In a saucepan, melt the butter over low heat. Add in all remaining ingredients {sugars, vanilla, corn syrup, beaten eggs and pecans} and stir to combine. Pour into the prepared crust.
- Cover with foil and bake for 30 minutes. Remove the foil and bake another 20 minutes. The center will still be a bit jiggly, but should be a deep golden brown.
- Allow to cool on a wire rack for at least 3 hours. Then place in the fridge to set up even further. Cut, slice and serve with whipped cream or ice cream.
