Golly, I realized when I woke up this morning that it was just 3 more sleeps until Christmas morning.  Can you believe it?  By this time I hope you have all your shopping done, the presents are wrapped and you are relaxing.

I'm trying.  Yesterday was the first day of school break and despite the four fights I broke up prior to 9 a.m., it was a pretty good day.  We had a hearty, big breakfast, ran some last minute errands, went out for lunch and then came back for naps {or cookie baking or me} and ended the day with burgers on the grill.

Because I'm still grilling due to waiting on our first significant snowfall.  Where is the SNOW?  Even the south has seen more snow than us.  Ugh.  I hate not having a white Christmas.

Let's talk cookies!

Okay Moms, I've been there.  It's Christmas Eve and you realize you have no pretty cookies to set out for Santa.  Plus you're tired and all you really want to do is get the kids tucked in bed before the chaos ensues in the morning.

Guess what?  These Santa Meltaway Cookies are done start to finish in 30 minutes!  Plus, double yay, they make a small batch - just 20 cookies.  At a time when you are most likely already overeating, who needs another HUGE batch of cookies in the house?  I love that this recipe is simple, uncomplicated and delicious.

Did I mention they contain no eggs?  Super simple, they literally melt into your mouth.  They taste in between a piece of shortbread and a sugar cookie.  Pretty darn perfect I'd say!

Santa Meltaway Cookies

Start to finish in just 30 minutes - these are perfect to throw together quickly on Christmas Eve!

ingredients:

Cookie Dough
  • 1 1/2 sticks butter, unsalted and softened
  • 1/2 c. powdered sugar
  • 1/2 c. cornstarch
  • 1 t. vanilla
  • 1/2 t. salt
  • 1 c. flour
Icing
  • 3/4 c. powdered sugar
  • 1 T. almond extract
  • 4-5 T. milk
  • Christmas sprinkles

instructions:


  1. Preheat the oven to 350 degrees.  Lightly grease a cookie sheet and set aside.
  2. In a stand mixer or hand held mixer cream together the butter and powdered sugar.  Add in the cornstarch and vanilla, creaming together.
  3. Sift the salt and flour together and add to the batter.  Scoop dough out into balls and place on the cookie sheet, then flatten the balls out with the underside of a cup dipped in powdered sugar.
  4. Bake for 10 minutes.  Allow to cool on a wire cookie rack.
  5. To make the icing, whisk together the powdered sugar, extract and milk.  This should make a medium to thin glaze, adding more milk if you need to thin it out.
  6. Place a small spoonful of icing in the middle of the cookie and add sprinkles.  Allow glaze to harden.
