Well, hello there Sunday.
Today these are my plans. Church with my girls {the boys will be at a morning wrestling meet}, prepping my famous lasagna for the big man's birthday dinner, enjoying a slice of homemade cherry cheesecake for dessert and not fretting about it, catching up on a few chapters of this book and hopefully, fingers crossed catching a glorious afternoon nap.
We had a long weekend, with one night this lady staying up until 1:30 a.m. chatting with friends. If anyone knows me, that is approximately 147 hours past my usual bedtime. Therefore, today I am running on fumes, a lot of morning coffee and prayer.
Oh and did I mention we received a wonderful present from Mother Nature in the form of a TON of snow? It seems every other day for the last week we have received a few inches. Which for those of you in southern regions who aren't quite understanding, well....IT ADDS UP. This stuff doesn't melt. We shovel, go to sleep and wake up to needing to shovel again.
At least my Garmin fitness watch is buzzing like crazy.
Is it Spring yet?
Beyond our busy weekend and dodging snowflakes, I've been in the kitchen {per usual} and I have a handful of fun recipes on tap.
Moore's Marinades and Sauces recently sent me a complimentary package of their flavorful, unique and might I add, quite tasty sauces in the mail.
Christmas in February I called it. I've always been a fan of dipping sauces, marinades and really anything that kicks up a dish a notch. If you see me eating a sandwich I'm either dipping it in something or slathering a spread on the bread. Who likes to eat dry, bland food? Not me!
Their sauces are hands down, some of my favorite.
I made these Bacon Wrapped BBQ Chicken Tenders for the Super Bowl. Because, well, it was the Super Bowl. We needed fun appetizers and kid, fun and friendly finger food {say that three times fast}.
I loved them. The husband loved them. My kids adored them. The chicken stays tender, the bacon gets crispy and oh, that sweet glaze. Between the brown sugar, pepper and salt combo, plus the brushed on barbecue sauce, it really didn't get much better that night.
They were great eaten plain and when the kids dragged out the ranch dressing, they were great dipped in that as well.
I'll be making these again for sure!
And I think next time for dinner alone. Maybe with a side of roasted potatoes and a chopped salad. Really, they just are perfect. Go and ahead and steal away and call them your own. I won't tell!

Bacon Wrapped BBQ Chicken Tenders
These oven baked beauties are a perfect party appetizer or even better for dinner itself. Sweet, spicy, salty and sticky!
prep time: 5 MINScook time: 45 MINStotal time: 50 mins
ingredients:
- 1 lb boneless, skinless chicken tenders
- 12 strips of bacon
- 1/2 c. brown sugar
- 1 c. Moore's Honey Barbecue sauce or any favorite barbecue sauce
- 1 t. pepper
- 1 t. salt
instructions
- Preheat the oven to 375 degrees and grease a 9x13 rimmed baking dish.
- In a bowl combine the brown sugar, pepper and salt.
- Lay down a strip of bacon. Roll the chicken tender in the brown sugar mixture then lay the tender on the piece of bacon. Wrap the bacon around the tender and place in the baking dish.
- Generously brush the bacon wrapped chicken with barbecue sauce and sprinkle with the remaining brown sugar mixture.
- Bake, uncovered for 45 minutes or until the chicken is done and the bacon is crispy. Brush with additional barbecue sauce before serving if desired.
