So I've had quite a few people over on Instagram asking about my favorites.  Favorite go-to meal, favorite beauty brands, favorite easy soup {showcasing today}, favorite podcasts, favorite clothing brands, favorite books, favorite everything{s}.  I guess I'm some sort of marketing friend to y'all.  That's fine, I'll take that.  I'm happy to share what I love if it makes my peeps happy.

So here starts my very *lengthy* discussion about some of my current favorites that put a smile on my face and hopefully yours as well.

Favorite Go-To Meal {currently}: 
I'm all about a snack plate, especially for lunches at home.  It is often layered with roasted red pepper hummus, carrots, string cheese, a beef stick/summer sausage, wheat thins and strawberries.

Favorite Beauty Brands:

Favorite Easy Soup:
Of course, this new, delicious Cheese Tortellini Minestrone Soup!  I've always loved a good minestrone, but I wanted to amp mine up a little with the addition of cheese tortellini.  Because #1, well, the kids love that stuff and #2 it beefs up the dish a bit.

And hello, I'm pretty proud of myself for making such a delicious vegetarian meal!  Those are hard to come by around here {we're a meat and potato family for sure}, so let's all give me a little pat on the back, okay?

Favorite Podcasts:
Right behind books, podcasts come in as a close second.  I listen to them when I need to zone out and chill for a bit.  I always, always have my earbuds in when talking a walk or working out.  I will also listen when I've popped a movie in for the kids {because how many times can I watch Zootopia?} or when the husband is working late and I'm laying in bed bored and nothing is on TV.

Favorite Clothing Brand:

In case you are a bit late to the party, I published this post back in December where I chronicled every single book I read in 2017.  That will tell you some of my favorites from last year.  And since I'm a book nerd and I've already read 10 this year {geek alert} I do have two in the running for first place votes so far, One True Loves by Taylor Jenkins Reid and The Orphan Tale by Pam Jenoff.  Both completely DIFFERENT, yet fantastic.

Now, can we get back to this soup please?

So the husband requested soup over the weekend, but I got all lazy and declared, I'M NOT MAKING SOUP and we grilled hamburgers one night and brats the next.

Then came my Monday morning cooking-for-your-family guilt and I caved.  I made this delicious soup.  It contains all the colors of the rainbow and I'm giddy over the moon excited about it.  As I previously said I added some cheese tortelli for good measure and I served grilled cheese sandwiches along side.

I've found that if I put 2,759 vegetables in soup my kids don't really care.  Now, if I had served them on a plate there would be grumblings as the day is long.  So note to self mothers, put lots of veggies in soup {oh, and dice them fairly small}.

This can be a simmering on the stove style of soup or it can be a slow cooker soup.  Either way it works great and your house will smell like an Italian backdrop.

Cheese Tortellini Minestrone Soup

This soup is the perfect hearty meal to warm you up. It is loaded with vegetables, beans and of course cheese tortellini!
prep time: 15 MINScook time: 30 MINStotal time: 45 mins

ingredients:


  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 carrot, chopped
  • 2 celery stalks, chopped
  • 2 small zucchini, chopped
  • 2 t. dried basil
  • 1 t. dried oregano
  • 1 t. dried parsley
  • 32 oz. can diced tomatoes
  • 4 T. tomato paste
  • 32 oz. vegetable or chicken broth
  • 1 c. water
  • 15 oz. can Great Northern beans
  • 1 1/2 c. dry cheese tortellini
  • 1 c. fresh baby spinach
  • 1 t. balsamic vineager
  • shredded Parmesan cheese for topping
  • olive oil, salt, pepper

instructions


  1. Heat a large stock pot or dutch oven to medium heat.  Drizzle with olive oil.
  2. Saute the onion, carrots and celery until slightly tender.  Add in the minced garlic.
  3. Add dry herbs and cook for an additional minute.  Stir in the tomato paste and cook another minute.
  4. Pour in the broth, water, canned tomatoes, zucchini and beans.
  5. Bring the soup to a slight boil, then down to a simmer for 20-25 minutes.
  6. Stir in the spinach and cheese tortellini and cook for another 10 minutes covered or until the pasta is done.
  7. Season liberally with salt and pepper and add in balsamic vinegar.  Serve warm topped with Parmesan cheese.

notes

If you plan to freeze this soup, cook the tortellini separate and keep separted until ready to reheat.  This will prevent the pasta from getting soggy.
