Philly Cheesesteak Pinwheels

Appetizers are my favorite and these Philly Cheesesteak Pinwheels do not disapoint.
They disappear quickly!

Trust me, I did not have a sixth sense and KNOW THE EAGLES WERE GOING TO WIN Sunday night, but it sure is nice to feature this recipe just two days later celebrating all things Philly!

Let me start with, I grew up a Cowboys fan, followed by a long period of where I didn't care much for pro football, then once married and having to watch it ALL THE TIME, I jumped back into it.  I still like the Cowboys, had some afflications with the Broncos when Peyton Manning was in town and now I kind of just watch whoever and often root for the underdog.

Therefore, for obvious reasons, I was rooting for the Eagles last night.

And they won!

I was also rooting for the following attractions from last night's party.  In no particular order.

1.  Justin Timberlake's halftime show.
2.  Pink singing the national anthem {with a nice surprise from Leslie Odom Jr. singing America the Beautiful}
3.  The many amusing commercials.
4.  All the food.

Oh, the glorious food.  The husband announced, "you don't need to make anything special, just something for dinner."

Of course I went all out.  Not only did I bake up these pinwheels, but also a fun bbq/bacon/chicken dish {coming soon} and because I'm American and cheese dips are required on Super Bowl Sunday, a new-to-me cheesy dip with tortilla chips.

We ate well.

My diet resumed today.

Which pretty much consisted of drinking coffee for breakfast and consuming no food until noon.  Followed by a light lunch and soup for dinner.

It's called gorge on day one, starve the next and resume normal eating on Day 3.  I'll let you know how it goes.

But these pinwheels.....all the love of the Philly Cheesesteak in an easy appetizer.  Roast beef, melty cheese, peppers, onions and a kick of sweetness with the balsamic vinegar turning into a sweet glaze.  And I haven't even mentioned it's all wrapped up in glorious, buttery puff pastry dough.

These are brillant.  And a bit dangerous.

But, oh so worth it.

Philly Cheesesteak Pinwheels

All of the taste of a good Philly Cheesesteak stuffed into delicious, flaky puff pastry!
prep time: 1 hourcook time: 25 MINStotal time: 1 hours and 25 mins

ingredients:


  • 1 box (2 sheets) Pepperidge Farm Puff Pastry
  • 24 thin slices  roast beef
  • 12 slices mozzarella cheese
  • 10 sweet mini colored peppers, diced finely
  • 1 onion, finely diced
  • 4 T. balsamic vinegar
  • olive oil
  • 1 egg

instructions


  1. Thaw the puff pastry dough according to the package, usually at room temperature taking about 40 minutes.
  2. Heat a large rimmed skillet to medium-heat.
  3. Diced the onion and mini peppers finely.  Drizzle olive oil in the heated skillet and saute the peppers and onions until very soft and translucent, almost to carmalization.  Add in the balsamic vinegar and continue to stir.  Take off the heat and allow to cool slightly.
  4. Preheat the oven to 400 degrees.  Spray a large, flat cookie sheet with cooking spray and gently press or roll out the puff pastry with a rolling pin.
  5. Lay on the roast beef, mozzarella cheese and pepper/onion mixture leaving a half inch of space on all sides.
  6. Gently roll the the puff pastry, tucking in the mixture as you roll until it's in a log.  Press together the sides/edges.  Using a serrated knife gently cut into 8 slices.  Doing this twice (with both sheets of puff pastry will generate you 16 slices).
  7. Lay the pinwheels on the greased cookie sheet.  Whisk the egg together and brush over the tops of the pinwheels.
  8. Bake for 20-25 minutes or until golden brown and crispy.
