Well, I have all three kids back to school and we survived the summer.  Can I get an AMEN to that?  We cruised through the past three months and per usual they flew by like lightning.  Trust me when I say, we were all ready for a bit more routine in our lives.

This Mama, hands down, for sure.

The one problem with going back to school are the crazy mornings.  I want them to eat something healthy, with a hefty amount of protein to carry them till lunch, but I often don't have the time to be standing at the stove frying up single portion eggs, bacon or even a bowl of oatmeal.

What's a Mom to do?

Well, this Mom right here drug out her Instant Pot.

If you've been reading for awhile you know I've used mine for various meals - baked French Toast, soups, hard-boiled eggs, creamy pastas and more.

I wanted to use this QUICK appliance and come up with a dish that can serve us for a few days.  The Iowa Egg Council and I teamed up and came up with my Instant Pot Hash Brown Egg Bake.  A perfect meal that can be eaten as dinner or "brinner", yet even more perfect to make on Monday morning and let the kids dig in till it's gone on Wednesday.

I'm super lucky my kids love eggs {I have many Mom friend's who kid's don't} because eggs contain 13 essential nutrients, including 6 grams of high-quality protein.  We are usually eating breakfast around 7 a.m. here and the kids will not eat again until around 11:30 a.m. with lots of learning in between.

They need something filling!

Breakfast boosts brainpower...studies show that kids who eat breakfast have better attendance, improved test grades and fewer behavioral and disciplinary issues at school.  At one Iowa school, take a look at how student behavior improved, when the students were offered high-protein snacks like eggs, in place of high-carb snacks, like crackers and granola bars.

I feel like I knew this, but to actually see the results is pretty impressive.

With just five minutes of prep and 20 minutes of total cooking time, you can put this together on Monday morning right before the kids get up and it will be ready when they are sitting down for breakfast.

You can also eat this for an easy weeknight supper {we did that too!} and serve it along side a good, homemade blueberry muffin {another family favorite}.

Unless you have a lot of kids, say 5 or more, this Hash Brown Egg Bake can easily stretch out for two to three meals.  Hearty, big eaters?  Maybe just one, but it will be the best one they've had all week!  Hand down, the best.

The flavor in this dish is incredible!  I decided on a whim to add a can of diced green chiles, along with the sausage, because they always provide a TON of flavor, but little to no heat.  Which, when cooking with kids, is sometimes a deal breaker, you know?

My other secret ingredient to many of my breakfast casseroles is to add cottage cheese to the cracked eggs.  It provides a creaminess and rich flavor that you can't get from other cheeses.  Then of course, the hash browns...any potato goes well with eggs!

If you're an egg lover like me and purchase eggs in your local grocery store, there is a good chance the eggs you bought were from an Iowa farm.  See?  We're more than just corn and pigs!

I remember how I was telling a friend years ago about how I buy 4-6 cartons of eggs at a time at the grocery store.  Her eyes got HUGE.  Maybe we are a bit over the top around here, but I do also bake quite a bit, so that helps amp up our egg consumption as well.

Instant Pot Hash Brown Egg Bake

Healthy, filling breakfasts are made easy in the Instant Pot! This egg bake can be thrown together on a Monday morning and eaten off of the entire week.
prep time: 5 minscook time: 20 minstotal time: 25 mins

ingredients


  • 1 lb. breakfast pork sausage
  • 4 oz can diced green chiles
  • 3 cups shredded hash browns
  • 8 eggs
  • 1 cup cottage cheese
  • 1/3 cup milk
  • 1 1/2 cups shredded Cheddar cheese
  • salt and pepper, to taste

instructions


  1. Turn the Instant Pot to saute setting.  Generously spray the inside cavity of the Instant Pot with cooking spray.  When hot, add in the sausage and diced green chiles.  Break up the sausage and cook until no longer pink.  Spoon out any extra grease.  
  2. Meanwhile, whisk together the eggs, milk, cottage cheese, salt and pepper.  Set aside.
  3. Add in the hash browns, stirring and cooking for an additional 2 minutes.  Turn off the saute setting.  If any brown bits are on the bottom of the pan, remove the sausage/hash brown mixture and scrape these off, cleaning out the bottom of the pan.  THIS IS IMPORTANT.  If any burnt pieces remain the Instant Pot will have trouble pressurizing.
  4. Pour the egg mixture over the sausage/chile/hash brown combo, making sure all the potatoes are covered.  Top with shredded cheese.
  5. Turn the Instant Pot to MANUAL and set for 20 minutes.  When done do a Quick Release method to release the steam.  Serve warm straight out of the Instant Pot.

  1. I tried this exactly per direction's and kept getting burnt food on my instant pot.. how did you cook it with such little liquids without it burning?

  2. I'm so sad that this didn't work! I was super excited but there was just not enough liquid for the pot to come to pressure so the food kept getting stuck to the bottom & burning. I scraped out the bottom 4 times trying to get it to work, but was never successful.:-(

  3. Does not work. There is no way the poster made this recipe as is in an Insta Pot. Everything gets burned and pot will not build pressure.

  4. I made this recipe but after sauteing, I put everything in a 7" round cake pan and cleaned the IP insert. I then put 1 cup of water in the insert. I then placed the cake pan on top of the trivet. This prevents the burn notice and allows the IP to come up to pressure. It was delicious!
