I started planning this holiday series back in August. That was 4 months ago! But let's be real, these last few weeks getting this all together has been a bit insane. I'm a one-woman-show around here {which really has me thinking I need an intern} so excuse my behavior if you've run into me in public and I look a bit frazzled.

Aroma Housewares was beyond generous and sent me this same appliance to test out as well. I mean, who wants me to recommend a product I haven't tried, you know?
I quickly took to their site and their recipes and made these Chicken and Rice Burritos. OH MY, DELICIOUS. We've made them twice and I'm guessing they will continually be on our meal plan once a month.
So, so, so easy and family friendly.
No need to grab Chipotle!
Listen to this. Now, I'll share a pretty print off version of the recipe below, but honestly you just combine the rice, salsa, chicken, black beans, seasonings and stock in the multicooker and stir. Then close the lid and set to WHITE RICE function. When done, fluff with a fork, stir in cheese and lime juice. Scoop into a tortilla and eat!
That's it.

Chicken & Rice Burritos
This simple, tasty family-friendly recipe comes together in just 45 minutes, but really only has a few minutes of prep! A new exciting meal for Taco Tuesday.

ingredients
- 1 cup uncooked white rice
- 1 cup salsa
- 2 cups pre-cooked shredded or cubed chicken
- 15 oz can black beans, drained and rinsed
- 1 T cayenne pepper
- 1 3/4 cups vegetable or chicken stock
- 1 cup shredded Mexican cheese blend
- juice of 1 lime
- 6-8 flour tortillas
Appliance Needed
- 20-cup Digital Multicooker; adjust the ingredient amounts for smaller cookers
instructions
- Combine the rice, salsa, chicken, black beans, cayenne, and stock in the multicooker; stir to combine.
- Close the lid and set for the WHITE RICE function.
- When done, open the lid and fluff with a fork; all of the liquid should be absorbed.
- Stir in the cheese and lime juice.
- Scoop some of the chicken and rice mixture into a tortilla; roll into a burrito and enjoy.
