Well, this is a food blog, so I figured it was high time to give away some actual food! And to be honest, I believe I picked one of the best foods.

Cabot Cheese has long been a favorite cheese brand of mine. Established in 1919, it is nearing 100 years strong. This award winning cheese comes from happy, healthy cows that product rich, buttery milk from over 1,000 co-op farms.
Ever since Cabot Cheese sent me this HUGE BOX OF CHEESE, I've been slicing off a piece almost daily and including it in all our meals.
No one has been complaining {and I have 3 kids....they complain}.
I wanted to create a recipe my kids would DEVOUR so I set my sights on a classic mac-n-cheese, but with a bit of twist by making it in my Instant Pot. Because the Instant Pot and cheese go very well together {trust me, I develop recipes for a living}.
Let me tell you this, dix the boxed stuff and make this homemade mac-n-cheese! It's so easy and I'm not just saying this because I cook all the time, it is SO EASY.
The cooking time is just 4 minutes!
All you need is elbow macaroni, butter, salt, water, half and half and cheese. Just six ingredients. I mean these are all things you have in your home already. I made this into a triple cheddar version using two kinds of Cabot Cheese {Vermont Sharp and Seriously Sharp} + a bit of American cheese, aka Velveeta for extra creaminess.
So I made this {again} just a few days ago while all the kids were in school and the house was quiet. Let me tell you this.
DON'T DO IT.
It's dangerous.
I gave myself a few scoops in a bowl for lunch. I ate that and then proceeded to fill another bowl. I could not stop. It's so creamy and smooth and just pretty much that best thing since sliced bread. Oh, and the kids went bananas over it, so that's always a plus.

Triple Cheddar Instant Pot Mac-n-Cheese
This is the creamiest mac-n-cheese you'll ever eat! And so simple with just 6 ingredients. Done in under 15 minutes.
prep time: 5 minscook time: 4 minstotal time: 9 mins
ingredients
- 1 lb elbow macaroni
- 4 cups water
- 3 T butter
- 1 1/2 t salt
- 1 cup Cabot Cheese Vermont Sharp, shredded
- 1 cup Cabot Cheese Seriously Sharp, shredded
- 2 oz Velveeta, cubed
- 1/2 to 3/4 cup half & half
instructions
- Place the elbow macaroni, water, butter and salt in the Instant Pot. Secure the lid and set the vent to "sealing".
- Manually set to 4 minutes. When it's done do a quick valve release (be careful as some of the butter might spray out) or allow it to release naturally.
- Stir in the cheeses and milk and combine until smooth and creamy. Serve immediately.
