are now into the time of year where hearty meals are welcomed. We

These
Fiesta Cream Cheese Chicken Enchiladas to be exact.
For
our busy family of five, dinners need to be quick and filling. With
three elementary-aged kids {two
of whom are heavily involved in sports}
they are always hungry.

Often
I am prepping and making food in between school and practices and
more often than not we are eating in shifts. It just depends on the
day!
My
kids {and
the husband, can’t forget him}
absolutely love Mexican food. It regularly makes the rounds weekly.
Who can blame them? It’s full of flavor and often feeds a hungry
crowd.

I
used all our favorite enchilada fillings to stuff into these
Mission®
Protein Tortilla Wraps.
What is not to love about the ease of shredded rotisserie chicken
mixed together with cream cheese, peppers, Mexi-spices and shredded
queso cheese?
Nothing.
There
is nothing wrong with that.
And
then I did the unthinkable. I poured heavy cream over the top of
these beauties right before they were topped with more cheese and
baked. It makes for the most incredible cheese sauce.
These
enchiladas are tender, yet just a tad crispy on the outside where the
cheese is lightly browned. They are perfect.
Who
wouldn’t want to eat at this table?
In
my opinion, nothing looks more inviting. Hearty, creamy, cheesy
enchiladas served and topped with fresh salsa and slices of ripe
avocado.
Tasty,
right?
Dinner
doesn’t have to be intimidating or awkward. Serve this on a
Tuesday night to your family or serve this to friends who have
gathered at your house for a celebration. Either works!
There
isn’t a person who will turn these down.

Fiesta Cream Cheese Chicken Enchiladas
These creamy and cheesy chicken enchiladas will become a favorite on Mexi-night! Take some help with rotisserie chicken and you can be eating in under an hour.

Ingredients
- 3 cups shredded rotisserie chicken
- 8 oz cream cheese, softened
- 2 banana peppers, diced
- 1 t chili powder
- 1 t cumin
- 1 t salt
- 1 pint heavy whipping cream
- 3 cups shredded queso cheese
- 12 Mission® Protein Tortilla Wraps
Instructions
- Preheat the oven to 350 degrees and spray a 9x13 baking pan with cooking spray.
- In a rimmed skillet over medium heat, cook the diced banana peppers for 1-2 minutes.
- Cut the softened cream cheese into squares and place in the skillet to melt.
- Once melted, add in the shredded chicken and stir. Then sprinkle in 1 1/2 cups of the shredded queso cheese + the seasonings and stir to combine.
- Place two heaping spoonfuls of the chicken filling into a Mission® Protein Torilla Wrap and wrap up. Place seam side down in the baking dish.
- Continue doing this until all the filling is used up. It will make 12 enchiladas.
- Pour the heavy whipping cream over the enchiladas and sprinkle on the remaining shredded cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and turn up the heat of the oven to 375 degrees. Bake for another 10 minutes until golden brown.
- Serve warm with fresh salsa and sliced avocado.
