Hosting at the holidays can either sound superb to some or dreadful to others.  I'm somewhere in between....leaning towards superb.  If I had a home that provided entertaining space then I'd probably be all about it.

Perhaps someday!

I do love creating a menu around hosting though....thinking of what foods pair well with what drinks, that to me is fun.

Especially if you have a pantry, cupboard, fridge and freezer full of ideas to choose from, right?  The hard part of entertaining at times can be the cost.  It gets expensive serving a nice meal to a large group of people.

I think we can all agree on that.

I was happy when they reached out to me this Fall {another local Iowa company!} because I just knew it would be a great gift to my fans this holiday season when we are all making big meals and inviting family members into our homes.

Grand View Beef is a century family farm located in Clarion, Iowa raising local 100% grass-fed beef direct from their farm to your table.  So how are they different?  For starters they use real horse power instead of RPMs.  They keep their animals stress levels low which in return makes for a more tender and flavorful meat.  After 8 months of age their calves are weaned from their mothers and fed hay, grass and alfalfa just until the snow melts and then remain on the pasture and eat grass the rest of their life.  You can also read about their antibotic-free life here.

Amanda from Grand View Beef was kind enough to send me a beef package - nothing like fresh meat overnighted to your front door!  I wanted to create a recipe that you all would love - nothing fancy {because we all know the blog isn't fancy} and nothing complicated AND using ground beef.

Yep!  Ground beef.  Not the most expensive cut of meat, but certainly the most used.  You guys are always requesting ground beef recipes!

I decided on Cheeseburger Pie.  This is a recipe I used to make all the time when we were first married, well before kids and for whatever reason it got forgotten.  It was time to showcase it on the blog!

If you need an easy weeknight meal, THIS IS IT.  It can also be prepped a day ahead and just hang out in the fridge until you're ready to bake it off.

I like recipes that are low maintenance.

It kind of comes together like you're making an breakfast egg casserole, but yet it tastes just like a cheeseburger {and only takes 25 minutes to bake}!  Ground beef, minced onion, cheese, worcestershire sauce, mustard - even chopped pickles and ketchup on top if you like.

Cheeseburger Pie


Cheeseburger Pie

All the flavors of a cheeseburger, but in a pie! An easy weeknight meal that can be served in well under an hour. Top with mustard, ketchup and chopped pickles for the full experience.

ingredients:

  • 1 lb ground beef
  • 1 T dried minced onion
  • 1 1/2 cup shredded Colby Jack cheese
  • 1 cup milk
  • 1 T worcestershire sauce
  • 1 T yellow mustard
  • 1/2 cup Bisquick
  • 2 eggs
  • salt & pepper

instructions:

How to cook Cheeseburger Pie

  1. Preheat the oven to 400 degrees.  Spray an 8 inch pie plate with cooking spray.
  2. In a skillet cook the ground beef till no longer pink, disgarding the grease.  Add in the minced onion, worcestershire sauce, mustard and stir.
  3. Lay the hamburger mixture into the bottom of the pie plate.  Top with the shredded cheese.
  4. In a bowl whisk together the eggs, milk, onion soup mix, Bisquick, salt and pepper.  Powl over the mixture in the pie plate.
  5. Bake for 25 minutes or until set and a deep golden brown.  Allow to cool for 5-10 minutes before slicing.
  6. Serve warm topped with mustard, ketchup and chopped pickle if desired.

NOTES:

I often double this recipe to feed our family of 5 and to have some leftovers!
