I've been eating pasta carbonara for years, but only until recently thought maybe I should share it with you!
This often happens. I make something over and over and over and the family gobbles it up and I never share it with my fans! Not intentional, it just sweeps me by. Sometimes I get so wrapped around coming up with fun, new dishes that I just plainly forget about the simple ones.
Hence, enter in this carbonara.
Here's another thing. Recently I want to cook everything in my cast iron skillet. Do you have one? I love, love, love my 12 inch Lodge Cast Iron Skillet. I've had it for years, but often it gets put away for a few months and again, forgetten.
Lately, I've just been keeping it on the stove at all times. It's great to use for this dish {or any quick pasta dish}, perfect for pancakes and french toast and my skillet biscuits {try those, will ya?}.
Anyway....

I love it because it requires minimal ingredients and comes together very quick. Who knew a combo of whisked eggs, Parmesan cheese, starchy water and a little bacon grease {yes, I said bacon grease} turns into the most delicious and light sauce.
It doesn't seem right....but it works!
Throw in some cooked spaghetti, the cooked chopped bacon and some light, fresh peas and THIS DISH IS THE BEST.
Kids love it. Adults love it. It can be served on a rushed Monday night or fancied up for dinner guests! Serve it with a side salad and some toasted bread and dinner is DONE.
Also - I have one kid who loathes peas, but will eat them in this dish.

Classic Skillet Pasta Carbonara

This is such a fantastic & easy pasta dish that comes together in 20 minutes. The simple sauce turns creamy, yet stays light. Great for a quick dinner or can be fancied up for guests!
ingredients:
- 8 oz spaghetti
- 3 strips bacon, chopped
- 3 cloves garlic, minced
- 2 eggs
- 1/2 cup Parmesan cheese, freshly grated
- 1/2 cup peas, frozen or fresh
- 1/2 cup to 1 cup starchy pasta water (from cooking the spaghetti)
- salt
- pepper

How to cook Classic Skillet Pasta Carbonara
- In a medium pot, fill with water and bring to a boil. When boiling liberally salt and start cooking the spaghetti.
- Meanwhile in a large cast iron skillet, heat to medium heat. Drop in the chopped bacon and garlic and cook until crisp. Remove from the skillet and set aside, keeping the bacon grease in the skillet.
- In a small bowl whisk together the eggs and parmesan cheese. Season with salt and pepper.
- When the spaghetti is done transfer to the hot skillet. Add in the peas and bacon and toss.
- Take a ladel of the starchy pasta water and stir slowly into the egg/parm mixture. Then pour that into the skillet, tossing to combine. Add more starchy water if sauce needs to thin out a bit. Taste and season with more salt and pepper if needed.
- Serve warm out of the skillet.
