It's been over a week since I checked in with all my readers, how are you doing?  It's been a whirlwind for all of us.  I hope today finds you healthy and safe and for most obvious reasons, hunkered down in your home.

We are into week 2 of the kids being home {i.e. me homeschooling them} and I'll be honest we've had our good days and our bad days.  In the mornings I write out our list of to-do's while drinking coffee and after we've all layed around a bit and gotten the sleep out of our eye, we try and get to work.

It's a combo of reading, math, fun games, geography, spelling, sight words and whatever else silly stuff I can come up with - I'm sure I'm forgetting things.  We also intermingle chores, breaking up fights, showering, getting outside and such.  

It's basically a three ring circus.

Some days go well {like yesterday being our daughter's birthday, that was a good day}, but some days go south quickly with everyone in tears.  I didn't go to school to be a teacher, so I'm learning just as fast as they are to this new schedule.  Technically our district is only off until April 13th.  I'm crossing my fingers and praying that happens.

So what's been happening in the blog world?

A lot actually.  In these past two weeks I have fielded more messages for easy recipes than I can count.  My post 30 'Grab From Your Pantry' Meals During COVID-19 has gotten major pageviews.  I'm so happy you all have loved it.

Besides pantry meals, the next best item people are asking for are....desserts!

We all have extra time on our hands and with the kids around we are baking!  Some are getting all fancy and making it a math lesson, others {like us} are just baking.  Over on Instagram I shared my famous banana bread recipe a few times and it's going bananas.


Kids love to bake!  And if you have the patience {it can be soooooooo trying}, let them get in the kitchen with you.  We seem to have the time!

This week we made these 5 Ingredient Million Dollar Bars.  I'm not quite sure how to describe these bars.  They are just too easy and too good.

Does any good bar contain just five ingredients?  Not too many.

For these all you need are animal crackers {or any sweet snack type cookie}, pecans, a can of sweetened condensed milk, butterscotch chips and chocolate chips.  No flour, no eggs, no baking powder.....NOTHING.

They are incredibly easy to bring together, take only 25 minutes to bake and taste heavenly.

These rich, fudgy, decadent bars need to find their way into your kitchen.  I will continue to make these for years to come.  I'm just starting to imagine all the functions I will bring these to - all day long baseball tourneys, church potlucks, holiday gatherings, bridal showers and so much more.

5 Ingredient Million Dollar Bars

It's amazing that these five ingredients can come together for such a fantastic treat. Rich, fudgy and pretty much sinful...these are always a hit with crowds!

Ingredients:

  • 2 cups animal crackers, finely pulsed (or any sweet cracker)
  • 1 cup pecans, finely pulsed
  • 14 oz can sweetened condensed milk
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips

Instructions:

How to cook 5 Ingredient Million Dollar Bars

  1. Preheat the oven to 350 degrees and lightly grease an 8x8 baking dish.
  2. In a food processor pour in enough animal crackers, when after pulsed on low it makes 2 cups.  Add these to a large bowl.
  3. Then add in the whole pecans to the food processor and again pulse on low to fine crumbs and add them to the bowl.
  4. Pour in the sweetened condensed milk, butterscotch and chocolate chips.
  5. Stir all to combine, pour into the baking pan and press down evenly in the pan.
  6. Bake for 25 minutes.
  7. Allow to cool for a bit before cutting into 16 bars.
  8. Keep covered.
