Calling all peanut butter fans!
This Nutter Butter Delight is simple and a crowd favorite.
Are you a crunchy or smooth peanut butter fan?
I personally adore smooth. It's all my Mom bought growing up, so I'm guessing that is why. Although shove a spoonful of crunchy in my mouth and I most definitely wouldn't spit it out.
This dessert is FULL of all things peanut butter. Cookies, the filling and the Reese's Pieces sprinkled on the top. It's down right blissful I might add.
A few weeks back I was grocery shopping and came to the chip, candy, cookie aisle {super dangerous, but at the same time it produced this recipe, so you're welcome} and I came upon Nutter Butters.
Now Nutter Butters are not a cookie I grew up eating. At least I don't remember ever eating them. But I will tell you this it is not because I don't like them! I remember having them at school functions and at friend's houses so let me tell you I was very aware of their greatness.
My mind immediately went to a cold, pudding-filled dessert layered with cookies.
I have no idea why, but this is how my food blogger brain works.
I just KNEW that these cookies layered in a creamy, cold Summery dessert would be fantastic. Therefore I grabbed two packages, came home and promptly hid them in an upper cabinet out of reach.
The kids and husband noticed them the next day.
My hiding abilities apparently were slacking, but thankfully they shouted about them and I heard it and came running.
Strict orders were given TO NOT EAT THE COOKIES. Surprisingly they listened.
Finally, much to their amusement I got my butt in gear and made this Nutter Butter Delight {in between pricing garage sale items for next weekend, planning out our short vacay this weekend and the normal laundry, meals, keeping track of kids routine}.
The very hardest part of this dessert is waiting for it to CHILL.
Trust me when I say you can put it together in 10 minutes. No kidding, just 10 minutes. But it does need to sit tight in the fridge to get those cookies a bit soft and to let the pudding mingle in around the pan.
It's hard, but worth it.
An absolute perfect dessert to bring to any gathering! People will go bananas for it and will most definitely ask for the recipe link {please send them my way!}.
You could also chop up Reese's Peanut Butter Cups and layer them on the top - that'd be fantastic. Or any of the extra Nutter Butter's you may have on hand. Even leave plain on top! All things work. Most importantly, make sure you have enough plates, spoons, forks and napkins on hand. This stuff is incredible.

Nutter Butter Delight

A creamy, cool, peanut buttery dessert! Nutter Butter cookies are layered between a pudding, whipping topping and peanut butter combo. Topped with Reese's Pieces of course!
Ingredients:
- 48 Nutter Butter cookies (two packages)
- 1 3.4 oz box instant vanilla pudding
- 2 cups milk
- 1/4 cup creamy peanut butter
- 8 oz Cool Whip whipped topping
- 1/2 cup Reese's Pieces, for sprinkling
Instructions:
- Line the bottom of a 9x13 baking pan with half of the Nutter Butter cookies in a single layer/rows and set aside.
- In a large bowl combine the instant pudding mix with 2 cups of cold milk. Whisk until a soft pudding forms (this takes about 5 minutes).
- Whisk in the peanut butter until smooth.
- Gently fold in the Cool Whip topping. Layer on half of this mixture onto the Nutter Butter cookies.
- Lay on the remaining Nutter Butter cookies and the remaining Cool Whip mixture.
- Refrigerate for at least 4 hours.
- Before serving sprinkle on the Reese's Pieces.
- Keep this dessert in the fridge covered. It will keep for a few days!
Notes:
***Note - it is not a "cook" time, but will need at least 4 hours to set up in the fridge.
