This Ooey Gooey Pumpkin Butter Bars are a big hit.
It's been awhile since I've given you a dessert!
Its about time, right?
This time of year is all about desserts - we are gearing up for Thanksgiving! And Christmas. Can we all agree we eat probably 70% of our yearly dessert intake during the last part of the year?
At least I do. Whether good or bad, it's true.
Have you ever had a butter bar? They've been around FOREVER. Simple to make and delicous to gobble down. I think I first saw Paula Deen making them 20 years ago.
They have a bit of a salty, soft crust and like the title says itself an ooey, gooey middle with crunchy, flakey topping. So many textures!
For this recipe I added pumpkin. Just because. You all know how I feel about pumpkin. I will eat it all year around, but this time of year I really up the annie and showcase it often. So right there in the middle I added pumpkin puree with the traditional pumpkin pie spices.
When you take these out of the oven, you will question yourself, "are these done?" Trust me, you will. I did! But they are supposed to be that way. As long as that center batter isn't "jiggling" they are done. They will set up and get all ooey, gooey delicious.
Definitely let them cool a bit. You start cutting these bars straight out of the oven and you might get a mess. They need time to settle down. Give them 30 minutes to chill a bit.

These bars are great to bring to Thanksgiving. Because, hello.....pumpkin. But also because they travel well! So much easier than carrying a pie that's jiggling all over the place.
People will clamor for the recipe {take paper copies of it, trust me}, it will probably show up the next month at their family Christmas.
When my kids came home from school the day I baked these - THEY DUG IN. Honestly, I had to hold them back from getting seconds. They loved them.

ReplyDeleteI just came across this recipe while searching desserts for Thanksgiving this year. In addition to the standard pumpkin pie I am definitely going to make this dessert also. I've made the Gooey Butter Cake before but can't wait to try with pumpkin added!

ReplyDeleteThe traditional ooey gooey butter bars have butter in the filling too. These do not Mine did not look like the photo. It tasted like a pumpkin cheesecake. We had to eat it with a fork. Should there be butter in the filling too?
