These fun sausage and pancake bites are a big hit with kids!
The best of breakfast in one bite.
We got dumped with 9 inches of snow overnight which meant no school for the kiddos, which meant a hot breakfast was in store. They wouldn't dare be bothered with cold cereal!
Fortunately, for them I already had this new recipe on the docket.
Let me just say, they were a BIG HIT. I literally walked away after setting the tray on the table to go and fold some laundry and five minutes later they were gone.
Completely gone. Minus the one they left for me.
Such nice kids.
Weekends are usually saved for the big breakfasts in our house, but honestly these could be whipped up any day where you have an extra 10 minutes!
They combine all of our weekend breakfast favorites - sausage and pancakes into one easy bite. They go together like the State Fair and sunshine and just make the most fun way to gobble down breakfast. A tender, slightly sweet pancake is studded with crispy bites of sausage into one delicious muffin.
Even one of my kids {I won't name names} who is hit or miss on sausage, didn't flinch a bit and ate two.

I used my tried and true homemade pancake batter - the one I've whipped up by heart approximately 789 times since my first child was born. Yes, homemade pancake batter - it makes a difference!
Feel free to use any favorite sausage you have on hand. I happened to have a box of turkey sausages from Costco in my freezer, so I grabbed six and got to work. But any kind of sausage works!
After I took them out of the oven, I popped out a few to cool and then poured the maple syrup directly into the muffin tins {three for my three kids}. That way they could eat right at the table, out of the pan and just dip away!
Hey, it saved on dishes. No need for plates or silverware.
These sausage and pancake bites are also great to put on your meal prep agenda!
Make a double batch, let them cool and throw them in a big plastic storage bag and keep them in the freezer. Just a few seconds in the microwave on school mornings and they are ready to eat again. Pair it with a banana, some yogurt or a glass of milk and your kids are set.
You might find yourself eating a few too.

These sausage and pancake bites are the perfect breakfast dippers for kids! Salty and sweet they are an easy weekend breakfast treat.
Ingredients
- 1/4 cup white vinegar
- 1 1/2 cups milk
- 1 egg
- 3 T oil
- 1 T vanilla extract
- 1/2 t salt
- 1 t baking soda
- 1/2 t baking powder
- 1 T sugar
- 1 3/4 cup flour
- 6 sausage links, cut into bite sized pieces
Instructions
- Preheat the oven to 350 degrees. Lightly spray a 12 cup muffin tin pan with cooking spray.
- In a bowl combine the vinegar and milk and let it sit for 5 minutes.
- Add in the egg, vanilla, oil, salt, sugar, baking soda and baking powder and whisk to combine.
- Add in the flour and gently fold together until just combined.
- In a skillet over medium heat, cook the sausage pieces until cooked through and golden brown.
- Place 2-3 sausage pieces into the bottom of each muffin cup, then fill the cup with the pancake batter. Add any remaining sausage pieces to the tops of the pancake batter.
- Bake for 16 minutes or until golden brown.
- Serve warm with maple syrup for dipping.
