The simplest of Mexican dinners!
My 3 Ingredient Chicken Taquito Bake is fun, easy and approved for busy families.
Don't ever say I don't give you easy dinners!
This one is beyond easy.
You see I have a 12 year old boy who is obsessed with taquitos. I think it started a few years back when every once in awhile the school cafeteria had "taquito day" and he came home raving about them.
Then after a visit to Costco I found the economy size pack {in both beef and chicken varieties}in their freezer section. A simple quick air fry and he was smitten.
Have I ever given you a 3 ingredient dinner?
Let me think.....there was my 2 Ingredient Everything Bagel recipe, my uber popular 3 Step Crock Pot Mashed Potatoes and most recently my 4 Ingredient Pumpkin Streusel Muffins.
But a whole dinner?
I honestly don't think I've ever given you a WHOLE meal that was just 3 ingredients.
This one was so much fun!
It's not uncommon for me to wake up in the middle of the night or first thing in the morning and be thinking about a recipe. And that is exactly what happened here.
I woke up thinking taquitos, green sauce and queso fresco cheese.
I have no idea why - but I knew I had to throw these 3 ingredients together to see if they tasted as good as I imagined.
I've always loved the taste of green enchilada sauce. It's not hot or spicy, but it has a nice tang to it. Mix that with crumbly Mexican queso fresco cheese and they go perfect together. Queso fresco cheese looks like and resembles feta cheese, but tastes different - it's super mild and melts amazing. You can find it with all of the other cheeses, often near the Mexican foods section.
If you have leftovers it's also great melted in omelets!
Both of these - the green sauce and the cheese taste amazing over the crispy taquitos. And make sure you get them crispy {you'll read how to make that happen in the directions}.
Feel free to grab beef taquitos at the store if that is what you prefer. We like both! The chicken and cheese variety is just what I happened to have on hand in my freezer.
After taking these out of the oven, I topped ours with shredded lettuce and chopped tomatoes {as they are STILL coming out of my garden}. The kids also grabbed sour cream - because, well they like sour cream on everything!
They ate half the pan one night and a simple reheat in the oven the next night as leftovers tasted just the same - maybe better?
