Here is a great easy Fall muffin that everyone can make!
My Cake Mix Pumpkin Streusel Muffins are a big hit.
It's pumpkin spice season!
I know, I have a lot of you that dislike it or think it's overplayed or do not want to hear about it until November 1st.
Sorry, I'm just not one of those people.
I love the flavor of pumpkin spice in my coffee, in cream cheese on my bagel, in sweet breakfast casseroles, in the smell of candles on a chilly Fall day.....and in my muffins! I loved it all long before it became a fad.
Way, way back in the day - well before kids and quite possibly well before I was married I remember making a muffin with a chocolate cake mix and a can of pumpkin. At the time there were some gals where I worked always bringing treats into work on Fridays and we were always trying to "one up" each other with unique baked goods.
I thought I was pretty clever with these!
The one I made, made a delicious chocolate muffin {I remember also adding chocolate chips} without having to use oil and eggs like most cake mixes suggest. Who knew a can of pumpkin could replace those and turn a cake into a muffin?
You all love my cake mix cookies, so when a reader asked for that recipe last week, I got to remembering these muffins. And since it's now very close to Fall, my mind turned to pumpkin. Why not make a tasty pumpkin spice version?
So out to buy a cake mix I went and Ingot to work.
And guess what? It worked!
Brilliantly I might add. These muffins are so easy and so tender and have just the right amount of pumpkin spice.
I didn't want these muffins to be "too boring" so I added a crumbly streusel as well. The perfect topping. It gives them a slight crunch and sweetness that they normally wouldn't have.
And because people will ask - you can leave the streusel topping off! A few calories will be saved.
It will not hurt my feelings at all - but I do recommend trying them with it. It gives them a bakery style feeling and taste. Throw on a slab of soft butter and your breakfast is MADE.
These muffins are fluffy and tender and I just cannot wait for people to see them. How can anyone find any easier muffin?

I served these alongside my Amish Breakfast Casserole for dinner and the kids dip back flips {not really, but if they could they probably would have}, and immediately asked me to bake them up again soon.
