This simple peach cobbler is virtually a mix & dump kind of dessert!
Make in a cast iron skillet or 8x8 baking dish. Either way it will be devoured.
I am not a traditional food blogger.
Most food bloggers will make and test a recipe many, many times before they share it with their fans. That is not me. My patience is short and quite frankly I just don't have time for all of that. What generally happens instead is that 95% of the time I get it right on the first try and I share it with you the following week.
It's just how I roll!
Saying this, I did make this peach cobbler TWICE.
I was given a GORGEOUS bag of fresh Iowa peaches {yes, Iowa can grow some really fantastic peaches if the weather cooperates} from a friend a couple weeks back. They were still a bit under ripe so I watched and waited another week before diving in.
Oh, and when I did.
Quite possibly some of the best peaches I've ever had.
I got the idea for cobbler in my head, but since I had never baked a peach cobbler before I really just winged it and prayed for a good outcome.
My first attempt was about 85% perfection. I tweaked a few things, baked it up again {this time giving the WHOLE dish to my neighbors} and well, the second time around was perfect.
Oh my goodness, the combination of syrupy warm peaches baked into a crispy batter and then topped with cinnamon and vanilla ice cream?
I do believe this cobbler very well could win some awards.
Now, listen up.
As I know I will get questions. If you do not have a nice, seasoned cast iron skillet to use, do not fret. Grab a simple glass 8x8 baking dish and it works just the same.
I just love cooking and baking with cast iron {plus, it makes for pretty pictures}.
But trust me the taste will be just as spectacular if using a regular baking dish. Heck, you could even bake it in a disposable tin foil pan to take to a friend or neighbor. I can guarantee they'll love it!

There is a reason it gets crispy, yet stays soft and buttery. When you look at the recipe you'll notice there is no stirring!
You melt the butter in the pan, you pour the batter over the butter and you lastly pour the syrupy peaches on top. Never stirring or mixing together.
A kid could make this!

Delicious! Made this tonight and did it on the grill in cast iron instead of the oven (which is out of commission currently).
ReplyDeleteDidn’t work for me. I followed directions and the batter puffed up and poured out over my skillet while in the oven, leaving a huge mess and very little ingredients to form a crust. I sprinkled the top with quick oats to absorb some liquid and provide some sort of crust. Not sure if I’ll try it again or try a different recipe.

DeleteAdded a bit of corn starch to the peaches and touch if vanilla to the milk. We will see how it turns out! Smells delicious 🤤

ReplyDeleteCurrently in the oven and smells heavenly! Very easy to put together. My peaches were very liquidy so i did add a bit of cream of tartar to thicken it. This was such a quick and easy dessert that I think I will do it again with maybe some cherries!
ReplyDeleteI’m going to try this in a smaller skillet. Also, I only added less sugar that what it called for. There was too much butter left over and I had to drain it. I’ve made this before and had better results but overall it’s very delish.
ReplyDeleteThis is peach soup. The "crust" disappeared into just a thick syrup. There was no crust. Plus, there was a strange after flavor. I followed the recipe with fresh deliciously ripe peaches so the flavor could not have been ingredient issues. The author seemed proud of the fact that there wasn't extensive testing. I think testing would have greatly helped.
ReplyDeleteThis was the first recipe I made with my new oven and these comments had me worried after I put the cobbler in to bake but it turned out wonderfully! I skipped cooking the peaches on the stove with the brown sugar, it seemed redundant since they would be baking for 40 minutes anyways. I just placed the sliced, fresh peaches on top of the batter and butter, then sprinkled the brown sugar on top of the peaches before putting it in the oven. 40 minutes later it was perfect. No soupiness or chewiness and no mess from bubbling over. Just a perfect peach cobbler. I will absolutely be baking this again! Thank you!
ReplyDeleteYeah this turned out terribly..I followed the directions to a T and it came out a hot peach caramel mess. Wished I had read the other reviews before trying :/
ReplyDeleteMade this in a pan a little too big so it came out thin but holy moly this is the best cobbler I’ve had!! Had my fiancé making noises I didn’t know he made lol. We both ate it up in a matter of seconds!!!
