This hearty Beefy Macaroni Soup is always a bit hit!
Easy to make and fills your bellies. Grab some crusty bread for dipping too.
Well the weather has turned here in the Midwest. It's officially turn on the furnace, wear your winter coat and scrap the frost off our vehicle in the morning season.
I kinda love it.
It means cozy dinners and nights inside {perfect for this homebody}. Because nothing beats a warm bowl of something to fill your belly up at night, right? This soup fits the bill. It's easy, is ready in under an hour and is just a big bowl of comfort.
As you know I have three kids and they are ALWAYS hungry. Always. The very first thing my oldest boy asks in the morning when waking up is, "what's for dinner tonight Mom?". It's 7 a.m. and we're all trying to get ready for school and he's worried about dinner.
A growing 12 year old boy is always, always hungry.
So in an effort to AMP UP this bowl of soup, I thought to myself, why not add macaroni? Kids love noodles in any shape or form. If they are somehow included into a dinner menu there is a great chance they'll love it.
Plus it helps to disguise the vegetables.
This easy soup starts with the ultimate trifecta - carrots, onions and celery. Any great soup starts with these triplet cousins! They are the base of this soup and help to give it a great underlying depth and flavor.
After you saute these beauties it's as simple as browing the ground beef {ground turkey or pork works fine too}, adding in the seasonings, garlic, tomatoes, beef stock and letting this baby simmer away on the stove.
What about that macaroni Ally? Where does that come in? It is the one and only strict rule about this soup. Do not dump the dry macaroni noodles into the soup to cook.
Just don't.
If you were to cook the noodles directly in the soup, those starches would make the soup REALLY THICK. Which I guess some people may like, but I didn't want this soup to turn into a big pot of thick goulash.....so here we are!
This way it stays a bit brothy. Perfect!
This batch of Beefy Macaroni Soup feeds a crowd! Really, I counted {12 hearty bowls in fact}, so this is a great one to tuck away for winter.
Also great for the holidays! So many families have a "soup night" where three or four big pots of soup get lined up on the kitchen counter for people to graze on. This one travels well and can be transferred to a crockpot on warm for big groups.

We like to serve it with my No-Knead Artisan Bread on the side to dipping. Soaking up those juices is a must! Plus, homemade bread is just good for the soul.
