As you know I have three {almost always hungry} kids. One of them being close to being a teenager. They pretty much eat us out of house and home.
Our oldest boy, who is a big, tall guy - athletic and strong - eats the most! He wakes up and asks what is for breakfast, while eating that he asks what's for lunch and the MINUTE he walks in the door from school he asks what's for dinner.
Then often while at the table eating dinner he casually asks me if I know what is for dinner tomorrow. Food is constantly on his mind!
What I've found out is that to keep them fuller longer, you need to give them substantial foods that stretch their bellies longer. Now, don't get me wrong there are many, many mornings we are rushing around and a bowl of cold cereal is all they eat. And that's okay!
But if I do know they have a longer day {church youth group right after school or sports practices at night} I do like to give them a hearty breakfast to start off their day.
You should have heard their cheers at these breakfast sandwiches!
With just five ingredients these breakfast sandwiches could not be simpler - English muffins, cheddar cheese, egg, bacon and mayo.
Oh, and parchment paper!
After assembling I love wrapping them in parchment paper because they stay protected well in the freezer, plus they are baked directly in the paper in the oven. No need for baking sheets, tin foil or the latter!

Just wait until they are baked and warm and that cheese melts and all the flavors come together. They have so much flavor!
And I know some people will ask....why add mayo to the English muffin? Why not, is what I say! It really just gives it an added layer of flavor and keeps that bottom half of the muffin moist.
Now obviously, you can swap any ingredient in these {sausage vs bacon or veggies vs cheese}, but in the end they all turn out great! Although I do prefer this bacon, egg, cheddar cheese combo.
Once assembled wrap these fun sandwiches tightly in parchment paper and place in a large freezer plastic bag. I also recommend labeling the bag and dating it {just in case they get shoved in the back!} and they are good frozen for up to 3 months.
To reheat, simply place the parchment wrapped sandwiches directly on the bottom oven rack in a preheated 375 degree oven for 20 minutes. They turn out perfect!
