I'm kicking off the New Year with a healthy breakfast option!
My new Brownie Baked Oatmeal is fun for breakfast on the go.
I try and kick off each year with some fresh and healthy recipes - it's that time of year when we are all focused on dumping the holiday cookies in the trash and putting some nicer ingredients in our bodies. Whether it lasts or not, I love giving you some new options.
Over the past few years some of these recipes have become some fan favorites. Here are a few.
This brownie oatmeal batter comes together in less than five minutes. You simply mix together the wet ingredients and then add in the dry - pour in a baking dish and you're done!
This baked oatmeal gets just a "bit" of sweetness from the vanilla Greek yogurt and pure maple syrup. If you choose to add the mini chocolate chips that will add some sweetness too. Otherwise there is no added sugars.
Plus no flour is needed!
They are also great heated up in the microwave just a bit for a warm, quick breakfast treat. I've found it's a great filling bite to eat while the kids are getting ready for school in the morning and I'm pouring my first cup of coffee.
My pre-teen daughter LOVED these. She dove right in after school on the day I made these - which made me happy as it's a much better alternative than chips, crackers or sugary granola bars.
I've also made a point to wrap one up and stick them in their school lunches!
The tiniest bit of chocolate makes them think it's a grand treat, but really they are getting a good amount of protein and fiber.
This pan makes 18 good sized bars. Each bar measures out to 153 calories, 6 grams of protein, 5 grams of fat and 3 grams of fiber.
If you omit the mini chocolate chips the nutritional value will be a tad better - but that's up to you! Either way, not bad for a quick breakfast option. We are all busy - especially in the mornings - so I hope this baked oatmeal bar works for you as it does for me!

Made this yesterday and my kids gobbled it down. So yummy and lots of chocolate.
ReplyDeleteI made this yesterday and enjoyed it this morning for breakfast. I warmed it up and added a little almond milk. It was delicious. I love the chocolate chips on it!
