21 Meal Ideas for Lent

We are in the season of Lent and whether you observe or not, here are some great 
meatless meal options for easy dinners.

I get so many requests for easy meal options and this time of year people will often ask for meatless meals during the season of Lent. 

For many they are eating meatless starting on Ash Wednesday and continuing each Friday until the arrival of Easter. Which means they want new and fun food ideas!

I grabbed 21 great options for all of you - again, whether you observe or not - because sometimes we just want an easy, meat free option! We've got a bit of everything in this line up. Delicious pizza, filling pastas, lots of veggies, shrimp and fish dishes, plus salads galore. Let's get started!


Zesty with a ton of Cajun flavor, this one pot skillet is fun. If you love shrimp and rice these pair beautifully together. Serve with a side salad and dinner is set.

I make these a lot in the Summer when zucchini is abundant. It's a great low carb pizza alternative! We load ours up with a flavorful spaghetti sauce (sometimes pepperoni), top with cheese and bake till crispy.


Who doesn't love breakfast for dinner? We sure do. These pancakes are amped up with fresh ricotta cheese and blueberries. Throw on a side of scrambled eggs and it makes a super filling dinner.


Like a traditional crab cake, but with tuna these are baked not fried, but still get crispy because they are coated in panko breadcrumbs. Don't forget the tasty Greek tzatziki sauce!

One of  my favorite pizzas (especially in the Summer, but still great in the Winter). A store bought crust will do, then top it with fresh mozzarella, basil, chopped tomatoes and a balsamic drizzle. So much flavor!


Make this for an easy lunch or dinner, a Mexican delight! All your favorites - corn, black beans, tomatoes, shrimp - drizzled with a tangy dressing over rice.


A lot of people LOVE fresh fruit in their salads so if you are one of those people this one is for you. Creamy avocados + juicy peaches have a honey and chile dressing.


I first made this for my husband years ago and together we gobbled up the whole pan. Fresh veggies sautéed with butter and seasonings all mixed together with fluffy rice and sliced almonds.


Mushroom and Asparagus Rice Pilaf



I've always said if you are craving veggies eat soup, because you can pile them in a bowl and it's less daunting! This soup is amazing - loaded with cheese tortellini in a tomato broth and is just pure comfort in a bowl.


Call all fish lovers! This mild fish gets cooked perfectly in the air fryer. Easy prep with yummy seasonings and quick cooking for a nice dinner.


Quinoa is the new popular grain that cooks up fluffy and gives you tons of protein. This dish combines our favorite fresh chip dip (Texas Caviar) and quinoa in a tasty salad!


Everyone has heard of chicken piccata, so why not fish? This quick dinner comes together in one skillet and has a ton of herbs for ample flavor.

I first whipped up this dish one night when I was low on groceries and it became an instant hit! Garlic lovers will rejoice. Use whole wheat spaghetti for even more fiber.


This isn't the tuna casserole of old (the one your Mom made), it's amped up with some Southwest flavors. Casseroles are easy to prep and bake off and this one is no different.


Using your Instant Pot for this dish makes it a really quick dinner and lots of cheeses make it a kid favorite! This mac is incredibly creamy.


My family loves breakfast burritos! We often eat them for dinner too. This version is loaded with veggies, eggs, potatoes and more.


Vegetarian Breakfast Burrito


This one can be done over the campfire! Or just in your oven if at home. Load up your fish with seasonings and veggies and the foil packet will steam it to perfection.


My good friend Kristin recreated the famous salad that Jennifer Aniston makes and eats often and people are going bananas for it - loaded with fresh herbs, veggies, quinoa, feta cheese and a tasty lemon dressing, don't miss out on this one.


My (I like to call it famous) alfredo sauce is so easy to make and pairs well over fettuccine noodles. Add in some quick grilled shrimp and dinner is done!


Cook this one all in a cast iron skillet for ample flavor! Fresh shrimp and asparagus is sautéed with a lot of seasonings and hot sauce. Don't forget the fresh lemon!


For nights when the kids are tired make these pancakes. Mine love them with mini chocolate chips, but blueberries are fun too! Such an easy way to make breakfast for dinner.
