This layered éclair dessert is no exception! Versions of this recipe have been around for years, but I shook things up a bit and used pistachio pudding instead of traditional vanilla. Our family LOVES pistachio pudding so I knew it would be an instant hit.
Over Christmas break my father-in-law made and brought this Pistachio Pudding Dessert to our house and ever since my kids have been asking me for more of that "green stuff" that Grandpa brought. Who knew they'd love it so much?
Pistachios are a member of the cashew family and resemble an almond-like nut. They have a complex flavor that is both sweet and savory (hence why they work in desserts) with the sweetness coming from the natural sugars in the nut.
I find most people who eat them in dessert form, often via pudding, say it has a vanilla-like flavor.
What makes this dessert appealing is how easy it is to make. With just 5 ingredients total (milk, pudding mix, Cool Whip, graham crackers and store bought chocolate frosting) it doesn't break the bank and even the kids could make it!
The hardest part is giving it a couple of hours in the fridge to firm and set up without taste testing.
Trust me, once you dig in it's hard to stop! This is a great dessert for a crowd. Not only does it look pretty on a plate, but it's easy to whip up just a few hours before.
