Every Mom needs ideas to fill their kid's lunchboxes once school rolls around and these Lunchbox Biscuits are the perfect addition! Bake up a batch and freeze for a quick grab-n-go option.
School starts back up next week for us (hallelujah!) so I figured it was high time to get a bit organized in the kitchen.
It seems like the kids have been on FULL FEED all Summer long. Snacking when they want on whatever they want. I always tell them - you are going to have a rude awakening the first week of classes when you don't have snacks on the ready.
Saying this, I do want to stock up on some options for their lunches. My kids are about 50/50 on packing a lunch or eating the school hot lunch. My youngest will pack hers everyday. My middle? Rarely. My oldest is about half and half.
I've been making these biscuits here and there for YEARS but never once thought to freeze them and stick them in lunchboxes. But after making them last week I immediately knew that is what I had planned to do - they are the perfect filling snack - carbs for energy and a little protein to tide a kid over.
In a way these biscuits remind me of the ones you get tableside at Red Lobster, but with the added bonus of ground sausage.
I made this last batch to go alongside scrambled eggs with breakfast the other day and they, as always, were a hit.
Then I promptly put the rest in a big Ziploc freezer bag and tucked them away for next week. They'll be the perfect lunchbox option to go along with some veggies and ranch, fruit, applesauce or string cheese. I'll put them in there frozen and they'll be thawed by lunchtime.
You know what is extra special about these? Well a few things. First, it's a one bowl recipe with just four main ingredients and some spices. Second, you can use a pre-made baking mix (such as Bisquick) for ease.
