Grab those fresh Summer peaches and make this quick sweet bread!
An easy one bowl recipe that's sweet and full of peach flavor.
My friend Laura dropped off a WHOLE BOX of peaches from her tree and let's just say it made my day.
People often turn their head when they hear that Iowa really can grow beautiful peaches in the Summer. It's not a well known thing, but it can be done. My parents had a peach tree for many years. I have memories of them on stellar years (they can be fickle) of propping up ladders underneath the very heavy branches just to keep them from breaking because of the weight.
Problem is if a we have a late frost often the peach trees will get confused and you'll be lucky to get a handful. So each year for peach trees in Iowa is a bit come and go. Some years are great! Some years are pitiful.
Judging by the box of peaches she gave me it was a great year.
I immediately sliced up a handful, placed them on parchment paper on a baking sheet and stuck them in the freezer. Once frozen they went into a freezer bag for later.
Then I made my Cast Iron Skillet Peach Cobbler. It has consistently been holding the #2 spot this past year in page views. People go bananas for it - and for good reason.
Then I made this Peach Quick Bread.
Wowza. We ate a loaf in an afternoon. I'm not proud of that, but it was unavoidable. This recipe makes just one loaf, so if feeding a hungry crowd I suggest doubling it!
Perfectly soft, tender, full of peach flavor with the added bit of almond extract that made my nine year old say, "Mom, this bread kind of tastes like sugar cookies!"
I'm not sure if that is what I was going for, but I'll take it as a compliment.
I'm baking another loaf for vacation next week (I always serve a handful of quick breads in the morning by the lake - my Blueberry Muffin Loaf and my Famous Banana Bread are favorites) - it will go in the freezer until we are ready to eat.
