These easy and fun egg bites are served pizza style!
Great for quick grab-n-go breakfasts during the school year.

Wake up to eggs this school year!
School is back in session which means our mornings are bit crazier! With three kids that have hectic schedules it's my job as a Mom to keep the house stocked with food - two are hungry teenagers, one loves to graze all day long - all of this keeps me thinking about food daily!
What to make for breakfast, what to have stocked for school lunches and want to get on the table for dinner in between sports practices.
It's a full time job!
Thankfully this new recipe I created with the Iowa Egg Council is EASY and TASTY.
The Iowa Egg Council and I have created a LOT of recipes over the years, many timed perfectly for the back to school season. Eggs are
an easy pick as they are naturally nutrient rich – at just 70 calories and 6
grams of power packed protein.
These Pizza Egg Bites are another one to add to the list. Start to finish they are mixed up and baked in under 35 minutes. They are perfect straight out of the oven, yet work great frozen to eat later too!
We decided to make these egg bites "pizza style" - because what kid doesn't love anything pizza? For mine I added chopped pepperoni and mushrooms, but really anything can be added - sausage, ham, peppers, olives - whatever you like!
You can use a regular muffin tin as I did (it works just fine) or if you have a silicone muffin tin (like this one) those work great too. Remember this recipe is easy.
After blending up the main ingredients (eggs, cottage cheese, mozzarella and seasonings) you simply pour the mixture into the tin and then top with the pizza toppings.
Now there is ONE trick to make these the fluffy and creamy egg bites they need to be. That trick is a water bath.
What is a water bath? And why does it work?
A water bath is a pan of hot water placed in the oven or around a dish in the oven that contains the food you need to cook. The hot water keeps the temperature surrounding the food more consistent.
In this case the eggs cook evenly and to a soft, fluffy texture. No more crispy edges and runny middles!
We ate a few of these right away (who could resist?) and then I froze the remaining egg bites. When ready to eat on a busy school morning, simply remove from the freezer, wrap in a paper towel and microwave in 30 second intervals until warmed though.
