A chewy chocolate chip cookie studded with pumpkin and spices!

It's September so that means pumpkin!
At least around here anyway.
My first new pumpkin recipe this year are my Chocolate Chip Pumpkin Cookies. And man oh man, these are GOOD. Great, actually.
I've baked oodles of pumpkin treats over the years. My Caramel Cashew Pumpkin Cheesecake, my Iowa Pumpkin Sheet Cake (move over Texas!), my Healthy Pumpkin Pancakes or perhaps my Pumpkin Cinnamon Roll Coffee Cake.
Another great trick to these cookies - chill the dough! One hour is great, 24 hours is even better. By chilling the dough it helps the cookies keep their shape and prevents them from spreading. It's all about the butter in the dough!
One problem though?
I chilled this dough in the refrigerator overnight and my family had problems keeping their hands out of it. It's a bit irresistible! They taste exactly like a perfect chocolate chip cookie but with hints of pumpkin spice.
Just look at how chewy they are!
One final trick to these cookies - let them cool completely on the baking sheet. This will help them to keep their shape. I know it's hard to not move them, but trust me it's worth it.
These cookies would be the perfect bake sale treat or gift to a friend who needs a pick me up. I think you'd be hard pressed to find anyone who does not like them.
