Reuben Pizza

If you love a traditional Reuben sandwich, then you'll love this pizza!
Corned beef, pickles, sauerkraut, swiss & mozzarella cheese + a homemade Thousand Island.

Have I told you just how much I love pizza?

If you've been around here for any amount of time you've seen all the pizza creations I've made. Some traditional (my Grilled Meatball Pizza), some that are known around the county (Chicago Style Deep Dish Pizza) and some that are a bit odd, yet surprisingly delicious (Sweet Asian Chili Crab Rangoon Pizza).

One thing they all have in common? Very tasty. And today's Reuben Pizza is no different.

What exactly is a REUBEN?

The Reuben sandwich is a North American grilled sandwich consisting of corned beef, Swiss cheese, sauerkraut and Thousand Island dressing, often grilled between two slices of rye bread. 

I've loved Reubens for as long as I've known. The sauerkraut never seemed to scare me! That tang, the salty corned beef, creamy Thousand Island dressing (I make my own, but store bought works just fine) and the melty Swiss cheese all come together perfectly.

And do dill pickles belong on a Reuben? I'm not quite sure but I think they do.

I took some help with a store bought thin crust (hey, we are all busy!) but I've made this on my homemade crust as well.

You will layer this pizza as follows: Thousand Island dressing, sauerkraut, chopped corned beef, shredded Swiss and mozzarella cheeses, then a bit more corned beef for looks. Once baked and crispy you'll top with sliced dill pickles and drizzle on more dressing.

It's amazing!

You've got to make this for your next Friday Night Pizza Party. We do that sometimes - I buy a 3 pack of store bought crusts and make three different fun pizzas for the family.

Any extra leftovers get eaten for lunches reheated over the weekend. Nothing makes kids more happy than pizza!

Reuben Pizza

Everything you love about a traditional Reuben sandwich goes on this fun pizza.

Ingredients

For the Pizza
  • 1 store bought pizza crust
  • 1/2 lb corned beef, chopped
  • 1/2 cup sauerkraut, drained
  • 2 small dill pickles, chopped
  • 1 cup Swiss cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Thousand Island dressing (homemade recipe below if desired)
Homemade Thousand Island Dressing
  • 1/2 cup mayo
  • 2 T ketchup
  • 2 T dill pickle relish
  • 1 t garlic salt
  • 1 t pepper

Instructions

  1. If making the homemade Thousand Island dressing - combine all the ingredients in a bowl stirring to combine and set aside.
  2. Preheat the oven to 425 degrees. Place the store bought pizza crust on a sheet of parchment paper.
  3. Assemble the pizza as follows: spread half of the dressing on the crust, then layer on sauerkraut, most of the chopped corned beef, shredded cheeses and the remaining corned beef on top.
  4. Lay the parchment paper directly on the bottom rack of the oven to bake (this gives it a crispy crust). Bake for 15 minutes or until golden brown and bubbly.
  5. Drizzle on the remaining dressing and top with the chopped pickles before slicing.

  2. The pickle should be there but done randomly and sparingly (as you show). I don't remember ever having a Reuban sandwich without a pickle on the side. The pickle is part of the experience of eating that sandwich.
