This simple Chicken Taco Chili is as simple as dump, set and go!
Well, I created the easiest and tastiest new soup this Fall! Each member of my family downed a bowl after a long night of sports practices and chilly weather.
It was pure comfort in a bowl.
I love using my crockpot this time of year, especially when we are busy in the late afternoons and evenings with activities. I have three crockpots - my favorite 9x13 casserole dish version, my big 8 quart crockpot I used for this recipe and my 5 quart one I use for smaller dishes and dips.

If you are a busy Mom - this is the quick weeknight dinner for you!
Everything (and I mean everything) gets placed in the crockpot and you walk away. Set it to LOW for 6-8 hours or to HIGH for 4-6 hours. When ready, you simply take tongs and shred apart the chicken right there in the crockpot.
No other dishes even need to be dirtied.
What's even better as this chili can stay on low for a long time in the crockpot, or even on a warm setting for a long time - the consistency stays the same. So for all of you who work long hours you need to test this one on your family soon.
Follow this recipe to a "T" or change it up a bit - any kind of bean would work in this one, a spicier canned tomato would work as well. And of course any extra toppings are always fun!
