Fruit Pizza Sugar Cookies (shortcut version!)

These sugar cookie fruit pizzas are so fun for Spring and Summer!
And it's a shortcut version, no need for homemade cookie dough. These fly off the table.

I have long been a fan of fruit pizza...you know the traditional sugar cookie bottom, cream cheese frosting, fruit topping dessert. But honestly I never seem to make it!

Long time fans have LOVED my Skillet Apple Fruit Pizza for years (it's a peanut butter, green apple, caramel, nutty version). 

Like most new recipes, they often come to me when I see an ingredient in the grocery store aisles. In this case pomegranate seeds in the produce aisle at ALDI. I immediately thought to myself, "these would look pretty on a fruit pizza".

But, per my norm, I decided to make these individual sized in the shape of cookies (fun, right?) and take a major shortcut in using store bought sugar cookie dough. While I love a good homemade cookie dough and appreciate it, sometimes it's just easier to slice and bake the store bought kind to save a little time.

And trust me, not a soul will know the difference.

Next step? Pick fun fruit! You can use any fresh fruit you like and enjoy. I picked blueberries, kiwi and pomegranate seeds for a few reasons, but mainly because they are pretty! If you want an eye catching cookie, I'd choose three fruits of varying colors - the colors pop and are fun.

Other good combos could be pineapple, strawberries, blueberries - OR - raspberries, peaches, kiwi. Really anything works. Fruit in season is always a good idea.

Now I have to admit the BEST part of the cookie, in my opinion, is the cream cheese frosting. It holds this beautiful cookie together, is creamy and just slightly sweet.

My recipe is simple - cream cheese, sugar and vanilla extract. That's it! It can be whipped up the day before and stuck in the fridge until ready to assemble. It holds up beautifully.

I delivered a few of these to friends in town (we can't eat them all) and my kids devoured many themselves with the help of some of their friends who were visiting. 

I kept them in the fridge for a cold treat - they'll hold up well in there for a few days - problem is you will see them every time you open your fridge doors!

Fruit Pizza Sugar Cookies (shortcut version!)

A fun way to make fruit pizza as individual servings! Use my shortcut way for a simple, fun dessert.
Prep time: 10 MinCook time: 13 MinTotal time: 23 Min

Ingredients

  • 2 16.5 oz tubes of Pillsbury sugar cookie dough
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 1 T vanilla extract
  • 2 kiwis, peeled & cut into small pieces
  • 3/4 cup blueberries
  • 1/2 cup pomegranate seeds

Instructions

  1. Preheat the oven to 325 degrees.
  2. Slice the cookie dough into 1/2 inch slices and lay on a large cookie sheet. Bake for 13 minutes or until the edges are just slightly browned. Allow to cool on the tray for 5 minutes before removing to finish cooling on a wire rack. Continue to bake cookies until all slices are used up.
  3. While the cookies are baking put the softened cream cheese in a stand mixer or bowl using a hand held mixer and cream it together with the sugar and vanilla extract until smooth.
  4. When the cookies are cool, generously top with the frosting and lay on the various diced up fruit.
  5. Store the finished cookies in the fridge until ready to serve. They will stay fresh in the fridge for a few days.

Feel free to use whatever fresh fruit you enjoy or what is in season!

    The thought of fruit Pizza sounds really interesting tbh but looking at the attached images, I am wondering if it has to come out exactly this way or are there other ways the final Pizza could turn out? Would appreciate your feedback.
