(Viral) Asian Cucumber Salad

Cucumbers are all the rage right now...everyone is eating them!
This popular Asian salad is easy to make and so delicious.

My teen girl texted me a few weeks back and all it said was "please add cucumbers to your grocery list". Ok....easy add. It's something we normally buy on the regular anyway, so I grabbed them and went on my way.

Come to find out she and her friends were obsessed with different cucumber salads after having watched THIS GUY on Instagram. One day her and a friend made three different ones in the span of an afternoon. After testing all three, I landed on a favorite and kindly asked her if I could put one on my blog.

She thought that was pretty cool, so here we are!

Now, I prefer the smaller English cucumbers, often seedless for this type of dish, but certainly any old cucumber will do.

The trick for any cucumber salad is to slice them very thin - either via a sharp knife or a mandoline slicer (but be careful they are SHARP, watch your fingers). After you get them all sliced up it's simply a matter of adding ingredients, shaking it up and devouring them.

These are the ingredients we settled on, trust me, it's simple! 

Sliced cucumbers, soy sauce (I used a lighter version), rice wine vinegar, chili crisp (one jar will last you a very long time, I purchased my jar from Trader Joe's, but here is a good one), everything but the bagel seasoning and dried ginger. That is it!

In fact if you have these ingredients on hand, you will be able to make multiple batches for a long time as they all go far.

If you are inpatient like us, go ahead and eat these right away. Give them a couple of hours in the fridge and they are even better. The Asian dressings and seasonings marinate them the longer they sit and WOW the flavor is incredible.

They are the perfect snack or side dish - great to bring along to a barbecue! Or bring out of the fridge to go along with dinner. Never would you dream of eating so many cucumbers in one sitting.
